Donna Hay black forest cake

19 Aug

The Hungry Mum black forest cake

The Hungry Dad is a huge fan of black forest cake and it recently occurred to me that I had yet to make it for him.

We were headed out on a picnic with some friends and I decided to bake this cake. Let me interrupt myself here by saying that picnics for me are heaven, while The Hungry Dad treats them as something along the lines of purgatory. All that eating in the fresh air – pah, says he.

So this cake was a peace offering / bribe to encourage him to enjoy the day. And a good time was had by all. Hooray! Continue reading

These mini raspberry and coconut crumble loaf cakes super easy to make using store cupboards so you can whip these up in no time at all. Because it is a Donna Hay recipe it is all simple technique with great results. Continue reading

Brown sugar and nutmeg cupcakes

Brown sugar & nutmeg cupcakes

I am 100 per cent team cinnamon and add it freely and generously to many of my baked goods.

Every now and then I feel a pang of guilt at the neglect I show towards nutmeg. In some ways nutmeg is more fun than cinnamon – I adore grating the fresh nutmeg directly into my baked goods, and the smell brings back happy childhood memories of custard tarts dusted with this fragrant seed. Continue reading

Ricotta and honey tart – a perfect dessert recipe

25 Jul

The Hungry Mum - Ricotta and honey tart

I blog almost nothing but sweet things but truth be told I do not have a sweet tooth. I crave savoury things, with a specific nod to the cheese family. Give me brie or give me death.

Many of my fav desserts – which I daren’t make lest I scoff the lot – have a cheese element: tiramisu, baked cheesecake, red velvet cake with cream cheese frosting, cheese platter…

I have new cheese-esque addition to the top dessert list after recently baking this incredibly easy and delicious ricotta and honey tart. Continue reading

Donna Hay brown butter pound cake

brown butter pound cake

Brown butter, I have decided, should be included in the government’s food pyramid. At the pointy end – nestled between legumes and fresh vegetables.

It is utterly delicious and life-changing. Who’d athunk that simply cooking butter until dark golden could create such a luscious taste sensation? Continue reading

Baked blueberry lemon doughnuts

The Hungry Mum blueberry and lemon baked doughnuts

Lemon is lovely, don’t you agree? I adore baking with citrus – the aroma of a zested lime or lemon coupled with the scent of general baking is amazing.

I recently found myself with a glut of lemons after my mum-in-law gave us a basket full from her tree. This recipe only used one of countless lemons but the freshness of these lemons really lifted the taste.  Continue reading

Donna Hay cherry and cardamom pound cake

The Hungry Mum - Donna Hay cherry pound cake

I always thought pound cakes were heavy, rectangular-shaped items. I have long loved pound cake and have fond memories of eating frozen Sara Lee pound cake with sultanas at my nana’s house (nana wasn’t a baker, bless).

Then I saw my guru Donna Hay had made a pound cake in a circular shape and my mind.was.blown. #easilyImpressed Continue reading

The best brown sugar cookie recipe to bake

21 May

brown sugar cookies 1

So, exciting news sports fans: Miss9’s soccer team will be playing at half-time of tonight’s Matilda’s game! For those that aren’t into soccer, the Matildas are the Australian national soccer team and they are playing Vietnam tonight at a stadium half an hour away. Miss9’s team will take to the field at half-time to play a short game. Yippee!

To keep energy levels up I have made these brown sugar cookies for the team (Miss9’s, not the Matildas!). I have made brown sugar bickies many times but they have never been as good as these. Continue reading

Donna Hay carrot cake with cream cheese frosting

The Hungry Mum - Donna Hay Carrot Cake 1

Hip hip hooray! It was recently the Hungry Mum’s mum’s birthday (or, the Hungry Nonna as she likes to be known. FYI she’s not Italian, just an Italian nonna wannabe!)

The extended Hungry family gathered for breakfast recently at a cafe near the Hungry Nonna’s home, and after eggs and toast and coffee and pancakes were consumed it was cake time!

Carrot cake has long been one of mum’s favourite cakes and everyone loves cream cheese frosting so this was the birthday cake. Continue reading

Funfetti white chocolate blondies

Funfetti white chocolate blondies

I cannot tell a lie – I did not make the vision of loveliness you see before you. That was Miss9, who created these funfetti white chocolate blondies by herself from woah to go.

That child is a way better cook than me, and unlike me, her repertoire includes non-sweet items. I am happy making cakes, I am unhappy making dinner #groundHogDay

Miss9 is passionate about white chocolate and when she saw this recipe in a recent issue of Super Food Ideas’ magazine she raided the pantry and whipped these up in no time. Continue reading
