Lemon is lovely, don’t you agree? I adore baking with citrus – the aroma of a zested lime or lemon coupled with the scent of general baking is amazing.

I recently found myself with a glut of lemons after my mum-in-law gave us a basket full from her tree. This recipe only used one of countless lemons but the freshness of these lemons really lifted the taste.

I found this recipe for baked blueberry lemon doughnuts on the lovely http://tutti-dolci.com blog, a site dedicated to amazing desserts. With the tagline ‘all sweets’ you know you are in for a ride through cake-and-dessert town.

I used my mini doughnut pan, which produces the most adorable baked doughnuts. I am on the hunt for a normal size doughnut pan but despite hunting high and low have been unable to find one.

Never mind – being so small means you can indulge in more than one doughnut…

GATHER:

1 1/2 cups flour
1/2 tsp baking powder
1/4 cup unsalted butter, diced, at room temperature
1/2 cup sugar
Zest of 1 lemon
1 egg
1/3 cup buttermilk
1/4 cup full-fat plain Greek yogurt
1 teaspoon vanilla extract
1 tablespoon lemon juice
1 1/2 cups blueberries

LET’S GET TO IT:

Preheat oven to 180C and spray a mini doughnut pan with non-stick spray.

In a small bowl sift together flour and baking powder; put aside.

In a small jug stir together buttermilk, yogurt, vanilla and lemon juice then set aside.

In bowl of electric mixer beat together butter, sugar, and lemon zest until pale, then beat in egg and beat until combined.

Scrape down sides of bowl with spatula.

Reduce speed to low and add flour mixture, alternating with buttermilk mixture.

Using a silver spoon gently stir in blueberries.

Scrape mixture into a ziplock bag, then cut off tip bag and pipe into doughnut pan until just over half full.

Bake for 9-15 minutes, until edges start to turn golden.

Cool in pan for five minutes before transferring to wire rack to cool completely.

    I agree! Lemon just adds a burst of freshness and another dimension to both sweet and savoury foods. Blueberry is a wonderful combination with lemon. I keep meaning to try baked doughnuts!

    I really must invest in a doughnut pan although they’re quite hard to get in Australia. How cute and delicious these look! And lemon is also one of my favourite flavours, especially combined with Greek yoghurt.

      I hear ya! I can’t remember where I bought my pan – I am in Sydney – but I have seen similar at Wheel & Barrow. Greek yogurt is so versatile and fresh 😉

    They look beautiful…I haven’t baked doughnuts before, just deep fried on the very rare occasion (very rare!). Thanks for this recipe, will give it a go!
