Funfetti white chocolate blondies

I cannot tell a lie – I did not make the vision of loveliness you see before you. That was Miss9, who created these funfetti white chocolate blondies by herself from woah to go.

That child is a way better cook than me, and unlike me, her repertoire includes non-sweet items. I am happy making cakes, I am unhappy making dinner #groundHogDay

Miss9 is passionate about white chocolate and when she saw this recipe in a recent issue of Super Food Ideas’ magazine she raided the pantry and whipped these up in no time.

My intervention – I made her reduce the amount of sugar and white chocolate in the recipe as the original was eye-wateringly sweet. As it is you’ll probably need to make a dentist’s appointment after a couple of squares of this pretty treat.

GATHER:

100 grams unsalted butter

150grams chopped white chocolate

2 tablespoons milk

1/3 cup caster sugar

2 eggs

1 cup plain flour

¾ cup self-raising flour

1/3 cup sprinkles / 100s & 1000s

Extra 80g white chocolate, cut into big chucks

Extra ¼ cup sprinkles / 100s & 1000s

LET’S GET TO IT:

Preheat oven to 180C and grease and line an 18cm x 28cm pan with non-stick baking paper, leaving a 2cm over-hang for easy removal.

Place butter, chocolate and milk in medium pan. Cook over a low heat, stirring until smooth and melded, remove from heat, then set aside to cool for 10 minutes.

With pan off heat stir in sugar, egg and both flours until well-mixed.

Add sprinkles and stir until just combined – do not over-mix.

Scrape half the mix into pan, scatter with extra white choc chunks, then top with remaining batter and flatten gently using offset spatula. Sprinkle with extra sprinkles.

Bake for 23-ish minutes – you want them set but a bit moist.

Remove to bench to cool completely in pan.

When cold slice into squares.
