Apple surprise bundt cake

 It will come as no surprise to Hungry Mum devotees that I adore bundts. In fact you may be heartily sick of me posting about these cakes but I just can’t get enough of their buttery goodness.

This recipe, which is tweaked from The Australian Women’s Weekly ‘Quick Mix Cakes’, is fast & simple and contains a secret apple centre. It isn’t overly fruity – it simply adds a flavoursome core to the cake.

Make it, dust it with icing sugar and enjoy a slice with morning tea.

GATHER:

125g butter, chopped

¾ cup caster sugar

2 eggs

¾ plain flour

½ cup self-raising flour

¼ cup milk

½ cup canned pie apples

Decent pinch ground cinnamon

LET’S GET TO IT:

Grease a 21cm bundt tin with non-stick spray and preheat oven to 170C.

Place all ingredients except apples and cinnamon into bowl of electric mixer and beat until everything is combined and changed in colour.

Sprinkle cinnamon over apples and mix until combined.

Spread half the cake batter into tin, then spoon over the apple mix, followed by remaining batter.

Bake about 40 minutes / until cooked when a skewer is inserted.

Stand in tin 10 minutes before turning onto wire rack to cool.

    Is that carpet as a background?? Cool design, and clever!!! I can never find the right background, but maybe if we get some old carpet squares……?

      Close – is an old bath towel! But don’t tell my mother-in-law – I nicked it off her and she’s probably wondering where it is 🙂

    So pretty! I will never tire of Bundt cakes so keep ’em coming. Have a fave cookbook devoted to nothing but (Bundt Cake Bliss by Susanna Short).     I’ve only tried making one but it stuck to the tin so badly 😦 I think I tried to take it out whilst the cake was too warm.

      Oh no – that is the worst. That’s happened to me on more occasions than I care to recall 😦 I spray sooooo much non-stick spray into my tin but lots of recipes advise using butter & flour. Hope you try bundts again x

    I am so jealous right now. I’ve never been successful making a bundt cake, In fact, the last one I attempted was so bad that it and the cake pan went to the trash together. And here you are, not only baking a tasty bundt cake but hiding a surprise in it. Life is so unfair. I don’t even have a piece of your fantastic cake to make me feel all better.

      Oh no – that is just such a sad story 😦 I wonder why it didn’t work? Was it a silicone pan? Those things are *evil*. I’ll cyber you a piece of bundt – I have caramel bundt on the bench as I type 😉

    My husband LOVES apple desserts so he’d be thrilled if i made this. I love simple delicious cakes like this, especially for breakfast, my mid-morning snack, lunch, a mid-afternoon snack and dessert. Yes, all in one day! 😉
