Oooh, how cute are these little cakes?! I love mini individual cakes and these little loaf cakes are a nice change from cupcakes – and they are a smidge more sophisticated, too..
These mini raspberry and coconut crumble loaf cakes super easy to make using store cupboards so you can whip these up in no time at all. Because it is a Donna Hay recipe it is all simple technique with great results.
Ensure you spray your mini loaf pans thoroughly with non-stick spray and all will be well with the baking gods.
Thinking of having a picnic? Take along these mini loaf cakes and watch everyone fall over themselves to grab one!
GATHER:
100 grams melted butter, at room temperature
1/3 cup caster sugar
1 cup plain flour
½ teaspoon baking powder
½ cup desiccated coconut
¼ cup milk
½ cup raspberry jam
coconut crumble:
1 eggwhite
2 tablespoons caster sugar
1 cup flaked coconut
LET’S GET TO IT:
Preheat oven to 180C and grease 6, ¾ cup capacity mini loaf pans.
In a small bowl combine eggwhite, caster sugar and flaked coconut – set aside.
In a mixing bowl stir together butter, sugar, flour, baking powder, coconut and milk.
Spoon into the tins and bake for 10-14 minutes, or until a skewer comes out clean.
Set aside to cool but leave oven on.
When cool spread 1 tablespoon of jam over each cake and press on some of the topping.
Bake for another 5 minutes, then cool in tin before serving.
