I think I enjoy Easter more than Christmas. Come December 25 everyone is racing around like a headless chook, and the stress is palpable.
From a baking perspective – which is my usual perspective as I am always baking – standing in front of an oven for hours on end in 35 C heat is simply awful.
But by Easter the weather has cooled and baking is more pleasant.
There’s also more scope to Easter-ise (yes, I just created that word) baking recipes.
Take these very easy six ingredient vanilla cupcakes. They are super fast to make and I made them seasonal by topping with buttercream and a mini egg. Perfect for Easter weekend get togethers or the Easter hat parade morning tea at school.
These simple vanilla cupcakes from scratch freeze perfectly so you can make them a few weeks in advance, let defrost overnight, then decorate just ahead of serving time on the day of your Easter gathering. I do love a do ahead dessert!
GATHER:
cupcakes
125g diced butter at room temperature
good splash vanilla
½ cup caster sugar
2 eggs
1 ½ cups self raising flour
½ cup milk
to decorate
thickened cream, whipped
small chocolate eggs
LET’S GET TO IT:
Preheat oven to 170C and line 2x 12 mini cupcake pans with mini liners.
Place everything in the bowl of electric mixer and blend until all combined and smooth.
Place in liners and bake until golden – around 17-ish minutes.
Remove from oven and allow to cool completely.
Pipe whipped cream on top of each cake then gently place a mini egg on top.

I’ve used the term ‘chook’ in a number of my posts. Internationals don’t always know what the word means. To Aussies its ‘second nature’; however, not always to our overseas friends. 😀
And yes, I agree with you: Christmas finds most of us like ‘headless chooks’. Easter is a little more sedate. Thank goodness…

Christmas is a crazy hectic time whereas Easter has that lovely 4 day weekend thing happening. Plus hot cross buns and Easter eggs. What’s not to love? 😛

These look gorgeous! I love Easter as well but the weather hasn’t cooled here yet!!! I’m having an Easter Sunday lunch for 12 and it’s probably going to be about 33 degrees. Not fair!
