I can’t believe I haven’t blogged this recipe yet! I have made this shortbread for every Christmas for years and years and have always had perfect results.
It is buttery, melt-in-the-mouth and a cinch to make. I often bake it then package it into tins for friends and neighbours. It keeps for ages – if it hasn’t been gobbled up by then!
As shortbread is so firmly associated with Christmas it is always gratefully received at festive parties and barbecues, too.
This is simple enough to throw together for a last minute Christmas party, for Christmas Day, or to give as a gift.
After baking your own shortbread recipe you will never buy the shop version again.
I urge you to make this easy shortbread recipe this Christmas – with just five easy to come by ingredients and baking time of 40 minutes it is the easiest Christmas dish you could possibly make.
GATHER:
180 grams cold butter, diced
¾ cup caster sugar
1 cup cornflour, sifted
1 ½ cups plain flour
1 egg
LET’S GET TO IT:
Preheat oven to 160 C and grease and line a shallow 20cm x 30 cm baking tin with non-stick baking paper.
Place all ingredients into the bowl of a food processor and blitz until smooth.
Tip the dough into the tin and press down evenly then gently score into bars.
Bake for 35-40 minutes or until lightly golden. Leave in tin until completely cool.
