Get your tasting spoons ready, bakers: the sauce in this cake is something you will be unable to resist.
Donna Hay created the salted burnt honey sauce in a recent edition of her eponymous magazine. Do not underestimate the bewitching properties of this sauce: four ingredients is all it takes to lift a lovely cake into superstar mode.
I decorated another cake recently with this same sauce and it was a huge success. I am thinking next time of sandwiching some cookies together with it – Ms Hay suggests serving it with waffle or ice-cream.
I found the cake recipe online at houseandgarden.co.uk and reduced the amount of sugar. It was super simple to make. I divided the batter between two tins so I could sandwich the cake together with the burnt honey sauce. Good thinking, me. It was a superb cake that looked super fancy, thanks to the super simple step of dusting icing sugar over a stencil. I highly recommend this decorating hack – takes seconds, looks great #WhatsNotToLove
GATHER:
Cake:
175g butter, diced, at room temperature
150 grams caster sugar
3 large eggs
175g self-raising flour
1 teaspoon baking powder
1 teaspoon vanilla extract
pinch of vanilla salt
LET’S GET TO IT:
Preheat oven to 180C and grease and line two, 20cm cake tins with non-stick baking paper.
Place all ingredients in bowl of electric mixer and beat until just combined – do not overbeat.
Bake for around 19 minutes – you will see the cake starting to pull away from the edges and a skewer inserted should come out clean.
Sit in pans to cool for about 20 minutes, then cool completely on wire racks.
When cold sandwich together with the burnt honey sauce – recipe below.
Salted burnt honey sauce:
¼ cup honey
½ cup sweetened condensed milk
1 ½ cups pouring cream
¼ teaspoon sea salt flakes (I used my sensational vanilla salt)
Cook honey in a large saucepan over medium heat until dark gold – this will take 2 to 3 minutes.
Slowly pour in the sweetened condensed milk and cream and whisk until well-combined.
Bring to the boil, then reduce heat and cook while whisking for 6 minutes – it should thicken considerably.
Sprinkle over the salt, whisk again, and remove from heat.
This sounds really interesting and the sauce is new to me. Love the stencil with the confectioners’ sugar. I’m pinning for future reference.

We see a lot of salted caramel but I’ve not seen the salted burnt honey before! I need to try this sauce – I bet it would be lovely with icecream too…

This cake certainly looks lovely with the stenciling on top! The simple, but elegant presentation is just right to highlight the filling. I am very intrigued by the sauce. Does it end up being “saucy” or more thick and spreadable like a frosting or glaze? Using it as a filling in your cake sounds perfect to me, but my mind is racing with other uses as well. Thank you, for sharing this. So many times, I have been fascinated by Donna Hay recipes. I really have to look into getting her magazine and cookbooks!
