Sometimes you want an easy-to-throw together cake that isn’t vanilla or chocolate. Sometimes you have a pantry full of honey as every time you’re at a fair or farmers market and you see another variety of honey you just can’t help yourself and end up buying yet another jar. Sometimes you just want to watch the hypnotic sensation of honey oozing from a spoon and falling lushly into a bowl of cake batter. Or maybe that’s just me.
Either way, this cake is your go to. There is no cake you can buy or make from a packet that tastes like this, with its golden sunshiny taste of honey. Bees, huh? Just amazing.
GATHER:
1¾ cups self-raising flour, sifted
¾ cup caster sugar
½ cup honey
155g butter, melted
3 eggs, lightly beaten
¾ cup Greek yogurt
LET’S GET TO IT:
Preheat oven to 180C and thoroughly grease a 25cm ring pan – make sure you pay special attention to the inner ring so the cake won’t stick.
Whisk the flour and sugar together with a fork in a bowl and set aside.
In bowl of electric mixer beat butter, honey, eggs and yogurt until light and combined. Fold in flour/sugar mix and use a silver spoon to stir until just combined.
Scrape into prepared pan and bake for 26-30 minutes / until a skewer comes out clean.
Set aside for 10 minutes before turning on to a cooling rack.
Perfect post! I have a lovely Honey Cake I make from an old recipe of my Mother in Law’s, however as it is for one of our Jewish Festivals it is quite heavy and rich. Your recipe is wonderful and will take to the bench for afternoon tea today…x
Thanks so much! Honey has such mystical properties. I love baking with it, or just eating it on toast 😉
YUM! I’d say the Greek yogurt makes it really moist and I just love honey! Honey anything!
Same! Honey is all the good 😉
Oh yeah, honey cake. Love bees, love honey and this is now on my every increasing, out of control list of things to make.
I too have an outta control ‘to bake’ list. So much baking to do, so little time etc
I’m like you with an overabundance of honey. Latest find is a Turkish Rose honey from Trader Joe’s. Certainly don’t need anymore, but never think twice about buying another variety if it looks intriguing. What fun to have a honey cake recipe–thanks!
I was listening to her about her new cook book on radio this morning. Very talented cook and yummy recipes 🙂
I am a mega fan – I love everything she does! I have her new book and highly recommend it 🙂
Love Honey! We put it on everything. Will have to try adding it to cakes now too. Starting with this recipe… 🙂
Honey is just amazing, isn’t it? I love the fact it never goes off so you can keep it literally forever.
This recipe looks yummy, thanks for sharing!
Thanks for checking it out 🙂
Right… I’m going to make this tomorrow! Sounds totally fabulous! 🙂 Thanks so much for sharing HM!
Woo hoo! Great news – please make sure you let me know what you think of it 🙂
It’s really lovely HM! Such a moist and beautifully flavoured, tender cake! My ring pan is quite a shallow one (thinking I might need to invest in a larger, prettier one…), so I made half a dozen cupcakes as well with the leftover mixture. All of the cupcakes have disappeared already and I’m sure we’ll make a good dent in the cake after dinner tonight! Thanks again for sharing this recipe. 🙂
Love a good honey cake, nom!
Me too Sara 🙂
I love honey and yoghurt together! The cake looks great and so easy to make! Thanks for sharing.
Cheers Stephanie – it is super dooper simple & tastes amazing.
I love Donna Hay recipes I am definitely going to try this one.
YOu & me both – she is always my ‘go to’ when searching for something new to cook.
Looks and sounds delicious
Awww, ta 🙂
Reblogged this on Chef Ceaser.
A good honey cake is definitely the way to go, this is so fluffy I could sleep on it (then I could finally eat my pillow!)
Cheers
Choc Chip Uru
Might be a sticky pillow but yes – you could totally eat it 🙂
Such a gorgeous looking cake! And I agree – I always have way too much honey in my pantry but I still keeping buying the stuff!
It is so hard to resist all that amazing honey in the cute little jars. Luckily Miss-just-7 is a honey fiend so I can justify my continued purchasing 🙂
That cake stand is the cutest! I love the look of this cake. Looks like one my Mum used to make when we were kids ❤
Cheers Cass. I love that cake has so many positive memories of childhood.
Honey cake oh my goodness:-)
Indeed 🙂 Hope you get a chance to make it.
Yes! We are on the same page with honey collections lol. Plus I’ll be harvesting honey from my bee hive shortly. The perfect cake for me. Also I bake with Greek yogurt quite a bit as well, gives such a lovely texture to cakes.
oooh, you’ve got a hive? How exciting! Bet home-harvested honey is unlike anything else.
Yes! I also tend to collect honey lol. I’m also about to harvest honey from my bee hive shortly. This cake is for me! I also bake with Greek yogurt quite a bit, gives such a lovely texture to cakes.
you have a hive?! Wow, how very cool. I am envious. And yay for Greek yogurt! We buy it by the 5kg tub and it go through it in the blink of an eye.
I can just imagine how lush this tastes. Wonderful recipe 🙂
thanks so much!
Looks so good! I love your cake keeper!
Thanks! It was an engagement gift and it has certainly been used many times.
I suspect you’re not the only one who craves the sweet taste & drizzle of honey with/in/on tea cake! Craving now!
Big yum 🙂
I reckon it would quite easily win a popularity contest 🙂
This cake sounds so good–I love that it has honey and yogurt in it!
two of the best things, in my opinion 🙂
This is such good timing, I have just bought over 2 kilograms of honey 🙂
Nice one! Hope you make it:)
I really do love cake with yoghurt, always so moist!
Honey in baked goods is one of my favourite ever baking smells!
