Chocolate chunk cream cheese cupcakes

A little while back I blogged about Oreo cupcakes and it went OFF! Obvs everyone is fond of a cupcake that is drenched in chocolate, more chocolate and a swirl of decadent cream cheese. I know I am, and I’m not even a cupcake fiend.

I stumbled across this decadent yet simple recipe on food.com, which was submitted by a member called Nan in Ontario. I made a few tweaks.

I made these for a family picnic and everyone, including my hard-to-please dad, enjoyed them. Did I mention how yummy they are?

GATHER:

1 package cream cheese, softened
1 egg, slightly beaten
1/3 cup sugar
1 pinch salt
About 100grams dark chocolate cut into chunks
¾ cup caster sugar
1 1/2 cups flour
1/4 cup cocoa
1 teaspoon baking soda
1 cup water
1/2 cup vegetable [not olive] oil

LET’S GET TO IT:

Preheat oven to 180C and line 20 cupcake pans with liners.

In bowl of electric mixer combine cream cheese, egg and sugar.

Add choc chunks and set aside.

In another bowl combine remaining ingredients then fill cupcake wrappers ¾ full with mix.

Drop large spoonful of cream cheese mixture on top.

Bake 20-25 minutes.

    Hard to please families must realise how lucky they are to have you hungry mum! It’s funny how often I’ll trial something new and taste test on my guy/workmates/friends depending on what it is. The appeal in these cupcakes is definitely the two toned, cream cheesy & chocolate layer, 🙂

      Oh yeah – often my work friends are guinea pigs! If I’m trying a new recipe that I’m not 100% sure of I make hubby try it first – he’s less likely to sue if I make him ill! On the flipside, my daughters get soooo excited on the rare occasion I buy bickies [which are always used in baking anyway] as I think they are over home made bickies!

      Thanks! I’m fairly allergic to making icing [soooo time consuming] so I almost never ice things 🙂
