Easter is one of my favourite times of year. You get to catch up with friends and family, eat delicious food and watch the kid’s faces as they hunt for eggs. And, like Christmas, you get to go completely over the top with your baking. Or is that just me?

As I write this I am preparing to host an Easter Sunday brunch for family. My mum offered to host but all I could think was – some of the desserts aren’t moveable! So we’ll be having everyone here! Amongst my trifles and tarts and bundt cakes I realised I hadn’t hit the chocolate target so I obviously I had to rectify that.

Gather:

55 grams butter
85 grams dark chocolate, chopped
55 grams milk chocolate, chopped
2 large eggs
¼ cup brown sugar
1/4 cup granulated sugar
1 teaspoon vanilla extract
3/4 cup plain flour
1/2 teaspoon baking powder

Better than a box mix white cake recipe

I often hear people say they don’t have time to make a cake from scratch so they use a packet mix. I am here to dump all over that argument.

This super fast and simple white cake uses stuff you already have in the pantry and takes mere moments to throw together. Don’t have an electric mixer? Beat it by hand like I did. Scared it will fail? Don’t be – it is fool-proof and requires no specialist equipment or knowledge.

Unlike a packet mix you know exactly what is going into this cake – real, actual ingredients that your great-grandmother would recognise. No fake flavours or artificial colours, just the backbone of baking recipes the world over: butter, milk, sugar, flour, eggs. You could even leave the vanilla out if you didn’t have any and the end result would still be a beautiful cake that you can dress up or down. Throw some ganache over the top, make buttercream frosting, sprinkle over icing sugar or make a simple icing sugar and boiling water paste and drizzle over.

In my local supermarket a 1kg bag of self-raising flour costs 75 cents, butter $1.30 and a bag of sugar is $1. Much cheaper than some of the packet mixes on the shelves.

Just bake this delicious white cake it and promise me you will never buy a cake mix again.

GATHER:

115 grams butter at room temperature, diced

¾ cup caster sugar

2 eggs

2 teaspoons vanilla extract

1 1/2 cups plan flour

2 teaspoons baking powder

1/2 cup milk

LET’S GET TO IT:

Preheat oven to 180 degrees Celsius and grease and line a 20cm round cake pan with non-stick baking paper.

Sift together the flour and baking powder in a small bowl and set aside.

Cream together the sugar and butter until pale and fluffy – you can do this by hand or in the bowl of an electric mixer.

Beat in the eggs, one at a time, and then add the vanilla.

Sift the flour mix over the batter and beat until combined, then add the milk and beat until all mixed together.

Pour into the pan and bake for 35 – 40 minutes / until a skewer inserted comes out clean.

Sit in pan for ten minuted before removing to wire rack to cool completely.

When cold ice or decorate however you want. I used my buttercream icing / frosting: buttercream icing / frosting:

125 grams butter, diced, at room temperature

1 cup sifted icing sugar

A few tablespoons milk

Beat butter in bowl of electric mixer on high for three minutes or until pale.

Turn beater off then sift over the icing sugar. Put beaters on low and beat to combine, then add enough milk to make a spreadable consistency. Use a palette knife to evenly spread over the top of the cake.

Growing up in Australia we kids were made aware of Oreos due to the fact that every sitcom on TV here was American. In these shows kids come from school, drank milk and had an Oreo.  They attained mythical status even though we had just a vague idea of what kind of biscuit, or cookie, they were.

Then, a year or so ago, supermarkets were awash with Oreos. And they were so cheap. I bought them, I tried, them, I was underwhelmed. Never fear, thought I, for they can be turned into a swoon-worthy treat – the Oreo cupcake.

Spicy Mexican chocolate tart . The Hungry Mum

I am going through a spicy and sweet stage. I always thought of spicy as something to have at dinner – laksa, anyone? – but as my love of baking increases, so does my curiosity with combining different tastes.

My light bulb moment with this spicy Mexican chocolate tart came one night when I was looking in the pantry for a nightcap of spiced rum and a nibble of chocolate.

I saw a bottle of my favourite tequila sitting alongside some dark chocolate and cinnamon and lo and behold – a glamorous dessert was born. The flavours of Mexico – spice from the cinnamon, heat from the chilli, tequila – shine through.

It goes without saying that this is an adults-only dessert – even if your young ‘un has a taste for chilli the fact that the tequila isn’t cooked off means it isn’t suitable.

Funfetti white chocolate blondies

I cannot tell a lie – I did not make the vision of loveliness you see before you. That was Miss9, who created these funfetti white chocolate blondies by herself from woah to go.

That child is a way better cook than me, and unlike me, her repertoire includes non-sweet items. I am happy making cakes, I am unhappy making dinner #groundHogDay

Miss9 is passionate about white chocolate and when she saw this recipe in a recent issue of Super Food Ideas’ magazine she raided the pantry and whipped these up in no time.

Have you ever met a beekeeper? I have met several over the years in my day job as a journalist and I am here to tell you that people who dedicate their lives tending to bees, hives, and all the paraphernalia that comes with it, are amazing.

I recently interviewed a beekeeper who I have met several times now. She is passionate and knowledgeable about all aspects of beekeeping and at the end of the interview she gave me a jar of honey from her hives.

This honey is nothing like the stuff you buy at the shops. It is thick and unctuous and just begging to be via a spoon dipped in the jar. Mmmm, honey. As the hive is located a few suburbs away it is possible that the bees may have even visited my garden to alight on my lavender bush.
