Sometimes its fun to serve an Easter dessert that isn’t totally choc-tastic but still has a nod to this beloved holiday.
Say hello to my Easter egg clafoutis – a simple baked pudding studded with as many mini chocolate Easter eggs as you care to add.
This easy baking recipe uses just six – or seven, including the Easter eggs – common kitchen ingredients so it is perfect to pull together if you have a last minute Easter weekend event.
This is best served close to serving so I wouldn’t recommend making it more than a few hours ahead of serving.
It is fabulous warm straight from the oven but still delicious at room temperature.
Feel free to dust with icing sugar or serve with a dollop of thickened cream – or simply add a few extra chocolate eggs on the side.
GATHER:
3 eggs
1 cup full fat milk
1/3 cup caster sugar
1 teaspoon vanilla extract
30 grams butter, melted
1/2 cup plain flour
As many mini solid chocolate Easter eggs as you want – I didn’t go to crazy but I won’t judge if you do it.
LET’S GET TO IT:
Preheat the oven to 180C and spray a ceramic or glass pie dish with non-stick baking spray.
Whisk milk, eggs, sugar, vanilla, and butter in a large bowl until sugar is dissolved and mixture is frothy – I used a handheld whisk for this.
Sift over the flour and whisk until smooth.
Pour the pie dish and drop in a handful of small solid Easter eggs.
Bake for 40 minutes or until golden and puffy.

hehehe! They are usually quite blase about baked goods as I bake most days. To be honest the only thing that gets them excited is brownies.
