Been on a baking frenzy and have a few leftover egg whites? This is the recipe for you! This is also a lovely do-ahead recipe for a party or cake stall as it is quick and easy and uses pantry staples.
You could also use this easy pink peppermint meringue recipe as the basis for individual pavlovas or Eton mess.
Or you may just feel like baking something sweet – if you need to now use up some yolks check out my custard recipe here: https://thehungrymum.com/2014/12/14/the-best-custard-from-scratch/
Or you may have some little people in your house who would be thrilled to bits to find these delicate little morsels in their lunchboxes ; )
GATHER:
3 large egg whites
175 grams caster sugar
1 pinch good quality salt
smidge peppermint extract
pink food colouring
LET’S GET TO IT:
Pre-heat the oven to 140C and line a baking tray with baking paper.
In bowl of electric mixer with whisk attachment beat egg whites and salt for 1 minute, then increase the speed to medium and whisk for another 2-3 minutes, until stiff peaks form.
With mixer still running add sugar a tablespoon at a time, until the mixture is stiff and glossy.
When sugar is totally dissolved add the peppermint beat, then use a skewer to drop in a few drops of pink food colouring. Add as much or as little as you want, depending on the hue you’re after. I erred on the side of caution and had pastel pink meringues.
Place mixture in a piping bag or Ziploc bag with the corner snipped off and pipe circles onto tray.
Baking time will depend on size of your meringues but check earlier rather than later – they should be firm to the touch but not beginning to darken. Mine baked for around 12 -16 minutes.
Turn off the oven and allow the meringues to cool in the oven with the door slightly ajar for a few hours.
Yum, these look absolutely fabulous! I think that they would be heavenly dipped in some dark chocolate as well 🙂
Oooh, I like the way you think 🙂
These are so pretty! Quick, easy and preventing waste by using up egg whites…perfect 🙂
Cute! Have you tried meringues in the microwave? The reason why I ask is that I made some peppermint meringues in the microwave. They were so fast!
no! In the micro?! Really?! How is that even possible?! My micro is super annoying – even defrosting causes me agony!
Super cute thanks Mrs H. And minty!? Even better, certainly worth a tiara. ☺️
Lady, I am a tiara #fangirl! Wish I could win one 🙂
What a great idea! These look so delicious and so pretty 🙂
This looks so yummyyy

Thanks for your kind words 🙂
Interesting idea, to add the peppermint extract. Sounds great., 🙂
I personally am not a fan of peppermint – neither am I fan of meringues – but everyone told me they enjoyed them!
Awww these look so lovely! I think this might be a great activity with my girls 🙂
Cheers! That’s Miss9’s hand in the piping photo, she loves piping 🙂
She’s very talented!! You’ve trained her well 🙂 My girls are 3 and 6….hmmmm…should I or shouldn’t I let them pipe…..fun vs mess 😉
Maybe give the 3yo a diff job – cracking eggs? – but the 6 yo could give piping a go! Couldn’t be worse than my attempts, I am so bad at it but Miss9 kills it!
Very creative! And pretty!
Thanks – quite appropriate considering we’ve just welcomed spring in Australia 🙂
I loved your comment on my blog! And as a matter of fact, I do have three egg whites leftover from making the hollandaise sauce for the asparagus on toast recipe. Here’s an excellent way for me to use up the egg whites and I do love how you tinted them pink xx
ta da! I usually have a ziploc bag in my freezer for the random eggwhites that are inevitable floating around. I wish it was mothers day,, rather than fathers day, tomorrow so someone would make me your saucy asparagus /egg/toast combo…
I read the title as pink peppercorn meringues and thought ooooh that’s interesting!! Pink peppermint works for me though too 🙂
oooh, that would be a meringue with bite! 🙂
These are so pretty!!! Gosh I love meringues! Yum!
Love meringue cookies and need to make them more often! Pinned the recipe to try these!
Thanks! They are so simple and take no time at all.
Little people? Hey I would be more than pleased to have a tiny meringue in my lunch box !
hehehe!! 🙂
How is it that I have never tried pepper mint meringues before? That needs to be changed asap!!
So munch food to try, so little time 🙂
I’m a bit confident about making meringues now after all my most recent baking projects. I will definitely give your recipe a shot!
Excellent Midge! It is such an easy thing to make for a party when the cupboard is bare.
These look sooo good! And I love it that they’re pink! Great post 🙂 xx Carmen
