Pink peppermint meringues The Hungry Mum

Been on a baking frenzy and have a few leftover egg whites? This is the recipe for you! This is also a lovely do-ahead recipe for a party or cake stall as it is quick and easy and uses pantry staples. 

You could also use this easy pink peppermint meringue recipe as the basis for individual pavlovas or Eton mess.

GATHER:

3 large egg whites

175 grams caster sugar

1 pinch good quality salt

smidge peppermint extract

pink food colouring

LET’S GET TO IT:

Pre-heat the oven to 140C and line a baking tray with baking paper.

In bowl of electric mixer with whisk attachment beat egg whites and salt for 1 minute, then increase the speed to medium and whisk for another 2-3 minutes, until stiff peaks form.

With mixer still running add sugar a tablespoon at a time, until the mixture is stiff and glossy.

When sugar is totally dissolved add the peppermint beat, then use a skewer to drop in a few drops of pink food colouring. Add as much or as little as you want, depending on the hue you’re after. I erred on the side of caution and had pastel pink meringues.

Place mixture in a piping bag or Ziploc bag with the corner snipped off and pipe circles onto tray.

Baking time will depend on size of your meringues but check earlier rather than later – they should be firm to the touch but not beginning to darken. Mine baked for around 12 -16 minutes.

Turn off the oven and allow the meringues to cool in the oven with the door slightly ajar for a few hours.

    Cute! Have you tried meringues in the microwave? The reason why I ask is that I made some peppermint meringues in the microwave. They were so fast!

      no! In the micro?! Really?! How is that even possible?! My micro is super annoying – even defrosting causes me agony!

      I personally am not a fan of peppermint – neither am I fan of meringues – but everyone told me they enjoyed them!

        Maybe give the 3yo a diff job – cracking eggs? – but the 6 yo could give piping a go! Couldn’t be worse than my attempts, I am so bad at it but Miss9 kills it!

      ta da! I usually have a ziploc bag in my freezer for the random eggwhites that are inevitable floating around. I wish it was mothers day,, rather than fathers day, tomorrow so someone would make me your saucy asparagus /egg/toast combo…
