As a child I thought Monte Carlo biscuits were the very height of sophistication. They were the ‘fancy’ bickies that relatives offered when you visited and I used to make the treat last by pulling apart the two halves then scraping the raspberry icing off with my teeth. Oh, yes – so sophisticated. It has been many, many years since I last had a Monte Carlo, or any shop bought bickie actually, but when I saw the recipe for these filled bickies in a book called ‘Sweet! 260 Little Slices of Heaven’ by Sally Wise I felt an urge to get baking.
I’m pleased to report that these golden, buttery bickies are an utter joy to consume. Or to quote my boss, about 200 per cent better than the shop bought version.
Gather:
125g softened butter, diced
125g sugar
3 teaspoons golden syrup
1 egg
1 tablespoon desiccated coconut
250g self-raising flour
For the icing
60 g butter, softened
1 ½ cup icing sugar, sifted
vanilla bean paste
boiling water
1/3 cup firm set raspberry jam
Let’s get to it:
Heat oven to 150C and line two trays with baking paper.
Cream butter, sugar and golden syrup in large bowl then whisk in the egg, fold in coconut and flour with a metal spoon.
Roll into ball size of a 20-cent piece/ one-inch diameter then gently flatten with fork that has been dipped in flour.
Bake 12-15 minutes or until lightly golden.
Cool on trays for 5 minutes then transfer to wire rack.
Icing:
Mix softened butter with icing sugar, vanilla and enough boiling water to make a smooth, spreadable paste
Spread jam on half the biscuits then spread about half a teaspoon of icing on remaining biscuits. Pair jam and icing bickies together and join together.
Store in an airtight container for up to one week.
Now I am hungry mom after looking at these super chewy and delicious treats.

I’ve never heard of vanilla bean paste. Sounds like a wonderful addition to a baker’s pantry. These look lovely. I wish I was having them with my afternoon coffee.
Vanilla bean paste is *the* best! It is expensive but you only need an incy amount to get a beautiful vanilla taste. I use it all the time and my jar is still very full 🙂

OMG I thought the same thing about Monte Carlos! In fact I would really love to visit Monte Carlo mostly because of the biscuits! 😛 And I ate them like that too!

Monte Carlos were always my first pick of the Arnotts family pack of bikkies and as a kid I would always sneak off with the rest of them mwahaha. These look great and I definitely would love to try making them at home 😀
