Easy one bowl white chocolate and strawberry blondies

The Hungry Mum white chocolate & strawberry blondies

I recently baked and blogged rich, dark chocolate brownies. These were a decadent treat and one for adults only.

This time it is sweetness and light in the shape of fresh strawberry and white chocolate blondies.

I made these as a thank you for a lovely friend, Maria, who was the first person to ‘like’ my brand spanking new Hungry Mum Facebook page! Feel free to like my Facebook page – and I’ll like yours back 🙂 

The offcuts went to Misses 7 and 9 who were in raptures (white chocolate is Miss9’s drug of choice and both could eat strawberries til they popped).

This is a super simple, one bowl recipe that you can make in mere moments. You don’t even need a bowl – all the mixing is done in the pan in which the chocolate is melted so make sure you choose a big one.

Like all brownie and blondie recipes you need to watch the baking time like a hawk – better to have them slightly undercooked when you pull them out of the oven than overcooked. Remember, they will keep cooking from the residual heat even after removed from the oven.

GATHER:

150g white chocolate, chopped

250g butter, chopped

1 cup self-raising flour

¼ cup caster sugar

3 eggs

1 cup strawberries, chopped

LET’S GET TO IT:

Preheat oven to 160C and grease and line a 20cm square cake tin.

In a large saucepan over a low heat melt together the white chocolate and butter, stirring, until 80 percent melted together. Turn off heat, stir again and leave – the residual heat should finish off the melting process.

Allow to cool for 10 or so minutes, then stir through flour, sugar and eggs until just combined.

Gently fold through the strawberry chunks, reserving a few. Scrape into pan and sprinkle over remaining strawberries.

Bake for between 30-39 minutes depending on your oven.

Remove and allow to cool for 10 minutes, the remove from cake pan and place on wire rack.

When completely cold cut into squares.
