How to make raspberry pikelets – an easy recipe

Pikelets, as Miss7 informed me, as just smaller versions of pancakes. I disagree – pikelets are the chubbier, cuter, more rustic cousins to their elegant pancakey counterparts.

Pikelets always vanish in no time in the Hungry Mum house and these beauties, taken from the user-friendly cookbook After Toast by Kate Gibbs, were no exception.

Misses5&7 positively inhaled them for afternoon tea on the day I made them, and I put a few more in their lunchboxes for the next day. The huge amount of leftovers were put aside in a Tupperware. It emerged that the Hungry Dad ate the lot for breakfast the next day.

These are lovely and fluffy and are bound to be a hit with your clan, too.

The recipe calls for buttermilk, which I didn’t have, so I tried Ms Gibbs’ trick of making your own by adding 1 tablespoon of lemon juice to one cup of milk and setting aside for 10 minutes. Et voila! It worked! Happy days.

GATHER:

1 cup self-raising flour

pinch best quality sea salt

1 ½ tablespoon caster sugar

¼ teaspoon bicarb soda

1 egg

1 cup of buttermilk

½ cup frozen raspberries

40g melted butter, plus extra for greasing the pan

LET’S GET TO IT:

Sift flour, salt, sugar and bicarb soda into large bowl.

Mix egg with buttermilk in a jug and tip into flour bowl. Mix gently, incorporating all the flour, then add raspberries. Don’t over-mix – the batter should have lumps.

Place extra butter into large frying pan and using a ladle put large dollops into pan.

Cook until bubbles start to form [about 3 minutes] then flip over and cook on other side until lightly golden.

Place cooked pikelets on plate and continue cooking the rest of the batter.

Serve with extra berries and cream, or eat as is.

we call these scotch pancakes – don’t know why and have them with slices of bananas pushed onto the top (which caramel nicely) or blueberries. Just bought some raspberries today though!

I love pikelets, my mum always made them slathered in strawberry jam and cream – yum! Great tip on turning milk into buttermilk, I never have any buttermilk when I need it so I will definitely be trying this.

Yum, yum, yum! When I was growning up, my mum would make pikelets as a special treat, but I have never tried adding extra fruit to them. Thanks for the inspiration!

Raspberry pikelets are the exact sort of thing I enjoyed as a kid, so it’s pretty cool that your little misses do too! Butter, berries & sugar are definitely a winner of a combo 🙂

great idea! i just bought frozen berries, which are surprisingly awesome to have handy in the kitchen 🙂 I’ve also down the lemon milk thing before because who really carries buttermilk unless they know they’re baking with it

The first time I had a pikelet I thought I was getting a pancake but they ARE different. They’re more sturdy but that’s probably not a proper description. 🙂

    • lifeisanadventure September 18, 2013 at 6:31 pm #

I think you can also use vinegar. you just need the acidity to mix with the bicarb to produce the bubbles and therefore fluffiness

      • thehungrymum September 19, 2013 at 2:58 am #

You’re right! Is a nifty little trick 🙂

I prefer pikelets to pancakes-I’m not sure why but it’s their portability and their snack size too 😀

    • thehungrymum September 21, 2013 at 4:33 am #

Portability! Yes, anything you can eat on the run is a good thing indeed 🙂

  20. catherinecuisine September 21, 2013 at 3:26 am #

Nice recipe! My mom showed me the “faux buttermilk” trick (adding lemon juice to milk)… and I always do that, instead of having to buy a whole liter of buttermilk!

    • thehungrymum September 21, 2013 at 4:33 am #

Isn’t it easy & convenient? So handy 🙂

  21. Allie September 24, 2013 at 8:53 pm #

I’ve never heard of pikelets before! But they look pretty much like what I’ve known to be called “Silver Dollar Pancakes.” I think I like pikelets better though! So cute and I love the addition of raspberries. 😉

    • thehungrymum November 25, 2013 at 5:03 am #

I’m guessing that pikelet is a British word! Yes, they would be similar to the American silver dollar pancakes. I like little things- means you can eat more of them 🙂

  22. The Smart Cookie Cook September 27, 2013 at 2:46 am #

I’ve never heard of a pikelet before; clearly I’ve been missing out! They look delectable, and I’d easily devour a dozen of them.

  23. Sophie33 September 29, 2013 at 1:18 pm #

MMMMMMM,… I have made them now already a few times & loved them so much, each time! Yummmm! 🙂

I really love this recipe, they make me hungry! I reminisce as my Granny would bring us warm pikelets and a cup of tea or milo when we would stay at her house 🙂

    • thehungrymum November 8, 2013 at 7:30 am #

Milo & pikelets – oh, yes! Perfect combo 🙂

  26. deliciouslynell December 18, 2013 at 1:43 am #
