If you are looking for an easy, delicious, one bowl, melt and mix chocolate cake you have come to the right place! I love melt and mix cakes for their simplicity and speed. By melting the butter and adding it to the cake mixture you are saving time without sacrificing any of the taste.

Going back over these recipes I noticed that I had not made a chocolate cake with berries. Having a heap of berries in the kitchen inspired me to create this recipe. I love the combination of berries and chocolate – the richness of the chocolate is cut by the natural sweetness of the berries.

I served a slice of this cake for Miss9’s after school snack – she also requested a bowl of edamame on the side – and I will be taking the rest of the cake to work to share with my colleagues, in exchange for a donation to MSF Australia (Doctors Without Borders).

GATHER:

125g melted butter

2 eggs

1/2 cup milk

1/4 cocoa powder

1 cup self-raising flour

3/4 cup caster sugar

½ teaspoon vanilla bean paste

¼ cup chocolate bits

½ cup mixed berries

LET’S GET TO IT:

Preheat oven to 170C and grease a 20cm round baking pan with non-stick cooking spray and line the base.

Place everything – except the choc bits and berries – in bowl of electric mixer and beat until smooth and mixture has changed colour. This should take around 5 minutes.

Stir the choc bits and berries into the batter with a silver spoon until just combined.

Pour into the tin and bake for 45-50 minutes or until a skewer poked into the centre comes out with just a few crumbs attached.

Leave in tin 5 minutes then remove to wire rack to cool.

Serve with fresh berries and thickened cream.
