Making pancakes from scratch for pancake day is so easy and I have the best recipe to share with you. This year I thought I would make a change from traditional plain pancakes – although this recipe can also be used to make these – by adding a couple of my favourite ingredients.
Shredded coconut, which I adore, and chocolate chips make a good thing, even better.
This easy, one bowl pancake recipe from scratch – no packet mixes here! – is so easy that Miss9 muscled me out of the way so she could take over pancake day cooking duties. When you have a child-friendly pancake recipe and a decent pan you are set for Shrove Tuesday!
If you are after a classic pancake recipe just omit the chocolate chips and coconut. If you are after an even more chocolate-studded pancake feel free to go to town with the choc chips.
Keep some paper towels handy to wipe out the pan between batches. I have a gas cook top and it gets super hot, which can burn the pancakes, even when the heat is turned low. After a few batches I briefly turn off the gas, and carefully run the base of the pan under running water. Be very careful if you do this as the steam can burn you.
As always, a jug of maple syrup served alongside pancakes is always a winner.
GATHER:
2 cups self raising flour
1/3 cup caster sugar
1/3 cup shredded coconut
1 1/2 cups milk
1 egg
25g butter, melted
1/3 cup milk chocolate chips
75 grams butter, extra, melted, for cooking.
LET`S GET TO IT:
In a large bowl stir together the flour, sugar and coconut then make a well.
Mix the wet ingredients together in a jug then use a silver spoon to stir into the flour mixture.
Place a large frying pan over a low hot and use a pastry brush to brush the pan with butter.
When it sizzles use a ladle to carefully place a scoop of batter into the pan, then sprinkle over a few chocolate chips.
Cook for three or so minutes, or until the surface is dotted with air bubbles, then flip with a spatula.
Cook for another two to three minutes on other side. Remove to a plate then continue cooking until all batter used.
Serve with maple syrup.
