My gals love muesli bars in their lunchboxes but I don’t love the packaging. Or the sugar. And muesli bars are so fast and cheap to make at home that there really is no need to buy them.
This recipe makes heaps and they keep for at least a week in a sealed container, making them the perfect snack.
Feel free to switch the choc bits for something else – nuts, if your school allows them, would be great (I’m thinking macadamias) or maybe dried apricots if your kids are fans (mine are not).
I was inspired by a recipe from taste.com – I halved the sugar and reduced the amount of chips used, and changed the oil used.
GATHER:
2 1/2 cups rolled oats
3/4 cup desiccated coconut
¾ cup choc bits – I used a mix of butterscotch and choc chips
1/3 cup brown sugar
2/3 cup plain flour
1/2 teaspoon baking powder
1/2 cup canola oil
1/3 cup milk
1 egg
LET’S GET TO IT:
Sift flour and baking powder together, set aside.
Preheat oven to 180C and grease and line a shallow slice tin, 18cm x 28cm. along baking paper to overhang to make removal easier.
In a large bowl stir together oats, coconut, sugar and choc bits, then stir in flour mixture.
In a large jug whisk together the milk, oil and egg then tip into the dry mix and stir with a silver spoon until just combined.
Pour into tin and use damp fingers to gently and evenly press down.
Bake for 20 minutes or until lightly golden. Cool in pan before removing to wire rack, then cut into bars when completely cold.
They look great. I’m trying to get a recipe for these bars that I really like but I’ve yet to find one. I’ll give these a go!

Looking at the lunchbox fillings, I’d say everything was “tradable” but the muesli bars. They’re worth far more than anything any of the other kids would have. Now, if you would give your kids 2 bars, they could keep one and use the other to become rich, by lunchroom standards. 🙂
ha ha! Vegemite and cheese sandwiches have zero currency, as that’s what the vast majority of kids take to school 🙂 But yes, popping two in the lunchbox is a win/win for Miss 8!

Now THAT is a lunchbox. We had to make our own school lunches, so vegemite sambos were about as creative as it got. If I ever have kids, their lunches will be totally gourmet. 🙂
