Our rosemary bush is a beast of a thing – large, unwieldy but capable of producing the most fragrant and delicious tasting leaves. No matter how much we use or give away there is always more, more, more taking over our herb garden.
Looking for another way to use it I stumbled across the mistress of original cooking concepts, Nigella Lawson. My well-thumbed copy of ‘How To Be A Domestic Goddess’ provided the answer with this luscious cake.

How I envy you your rosemary plant. Our winters are too severe and I’ve no luck bringing mine indoors. So, I buy a new one every spring. Recipes like this load are the reason I buy the plants. This loaf sounds delicious!
Trust me, it is pretty much the only thing that hasn’t died! Sydney winters are v mild so we have that on our side 🙂 This cake really is delish.

I guess that’s the upside to boiling hot Sydney summers – which I hate, by the way – is that our winters are very mild. I love this cake!

I am so intrigued by this cake!
It sounds quite contradictory but I can assure you that it is a beautiful, if humble-looking, cake.
I saw Nigella is doing a tour early next year, thinking I will spend the first few weeks baking Nigella recipes then be a total fan girl when I ‘meet’ her. LOL! Great recipe, perfect for the truck load of rosemary I have too. 🙂
