The Hungry Mum mini jam doughnut muffins

I am in love. The objects of my affections are mini jam doughnut muffins. These sweet treats have captured my heart and occupy every waking moment of the day.

I am not alone in my adoration – Misses 7&9 are also smitten, while the Hungry Dad is playing it cool while secretly scoffing the lot.

This hybrid treat is baked, then basted with melted butter before being rolled in cinnamon sugar. Are you feeling the love yet?

Miss9 christened these baked mini jam doughnut muffins ‘duffins’. Some of my duffins were stuffed with rolled up balls of my homemade chocolate ganache instead of jam. These were especially exquisite.

I was inspired by a recipe by the Australian matriarch of baking Margaret Fulton – I shrunk my ‘duffins’ down to mini size, reduced the sugar and omitted the salt.

GATHER:

2 cups plain flour

1 tablespoon baking powder

2 eggs

1 cup of milk

1/3 cup brown sugar

1 teaspoon vanilla essence

1/3 cup vegetable oil

1/3 cup strawberry jam

topping:

60 grams melted butter

¼ cup caster sugar

1 teaspoon cinnamon

LET’S GET TO IT:

Preheat oven to 200C and grease 2 x12 mini muffin holes.

Sift together the flour and baking paper, set aside.

In a small bowl mix together the cinnamon and sugar for the topping, set aside.

In a large jug or bowl whisk together the eggs, brown sugar, vegetable oil, vanilla and milk.

Stir in the flour mixture – do not overmix and expect a few lumps (they will vanish during baking).

Using two teaspoons drop batter into greased muffin tins and bake for 12 minutes or until lightly golden.

Remove from tin, brush with melted butter and roll in the cinnamon sugar.

These are best eaten warm but like revenge can also be served cold.

    In love!? I won’t dob on you, promise! Duffins!? Hilarious but I am so making these soon. One of my sisters makes amazing ‘fauxnuts or fonuts’ which are the bomb but these, with their jammy interior sound duf-lightul. (Yes, pushing the envelope there…)

    Oh my goodness these look amazing! I love the idea of making doughnuts without having to deep fry them (it always puts me off somehow) so these look perfect 🙂

    These look and sound wonderful. I do love the jam centre and smothering them in melted butter then rolling them in cinnamon sugar just sounds so very yummy. I would love these for breakfast this morning xx
