I am in love. The objects of my affections are mini jam doughnut muffins. These sweet treats have captured my heart and occupy every waking moment of the day.
I am not alone in my adoration – Misses 7&9 are also smitten, while the Hungry Dad is playing it cool while secretly scoffing the lot.
This hybrid treat is baked, then basted with melted butter before being rolled in cinnamon sugar. Are you feeling the love yet?
Miss9 christened these baked mini jam doughnut muffins ‘duffins’. Some of my duffins were stuffed with rolled up balls of my homemade chocolate ganache instead of jam. These were especially exquisite.
I was inspired by a recipe by the Australian matriarch of baking Margaret Fulton – I shrunk my ‘duffins’ down to mini size, reduced the sugar and omitted the salt.
GATHER:
2 cups plain flour
1 tablespoon baking powder
2 eggs
1 cup of milk
1/3 cup brown sugar
1 teaspoon vanilla essence
1/3 cup vegetable oil
1/3 cup strawberry jam
topping:
60 grams melted butter
¼ cup caster sugar
1 teaspoon cinnamon
LET’S GET TO IT:
Preheat oven to 200C and grease 2 x12 mini muffin holes.
Sift together the flour and baking paper, set aside.
In a small bowl mix together the cinnamon and sugar for the topping, set aside.
In a large jug or bowl whisk together the eggs, brown sugar, vegetable oil, vanilla and milk.
Stir in the flour mixture – do not overmix and expect a few lumps (they will vanish during baking).
Using two teaspoons drop batter into greased muffin tins and bake for 12 minutes or until lightly golden.
Remove from tin, brush with melted butter and roll in the cinnamon sugar.
These are best eaten warm but like revenge can also be served cold.
Wow, these look unbelievably delicious!
thanks Linda – they didn’t last long around here!
These are gorgeous. I need a plateful! Now!!
Thanks Philip – will swap for macarons 😉
You’re on 🙂
I haven’t eaten breakfast yet and I’m so hungry and need to go to the shop to buy food so looking at this is making me crave it sooooo much!
hehehe! Ooops, sorry @Kim-Joy 🙂
In love!? I won’t dob on you, promise! Duffins!? Hilarious but I am so making these soon. One of my sisters makes amazing ‘fauxnuts or fonuts’ which are the bomb but these, with their jammy interior sound duf-lightul. (Yes, pushing the envelope there…)
hehehe, cheating on the Hungry Dad with food sounds a bit tragic really, eh?! And yes please to a plate of fonuts #hubbaHubba
I want these RIGHT now!! Looks delicious 🙂
mmm 2 of my favourite foods combined!
Duffin time!
These would be such a hit. I made big cupcake sized ones and gifted some to a friend. Such a tasty old skool treat.
Oooh, big ones would be fab! And giving them away would mean I couldn’t scoff half of them in one go #ooops
Who wouldn’t say yes to a 2 in one pastry – doughtnut muffins or “duffins” as you call it, so cute! Put a tray in front of us and we promise it will vanish!!

Screw the toast with jam…. I want a duffin. 🙂
That’s a life motto right there 😉
duffin = inspired name for such a cute treat!
Miss9 sure has a way with words 🙂
I love how light and airy they look. I bet they melt in your mouth!
They really do melt in the mouth! And then you get to have another. And another! #win
Oh my goodness these look amazing! I love the idea of making doughnuts without having to deep fry them (it always puts me off somehow) so these look perfect 🙂
I am TERRIFIED of deep frying so these are a good compromise.
Food porn! Should be illegal. 🙂
hehehe!
Yum 2 of my weaknesses doughnut and muffin rolled into one
Yep, they are pretty addictive!
Looks delish.. Love the sweet filling
They were so good! I will be making them again tomorrow 😉
they look awesome!
Don;t mean to brag but they totally are!
Must try these!
You need these in your life, right now!
Oh yum!! When I’m back on carbs, I will have to try these!!
Good on you for skipping carbs – they are totally my weakness. As is cheese. And wine. And macarons. #allCarbs #ISeeAPattern
How lovely! I’ve been looking at doughnut recipes for a while now, and I love that dusting of cinnamon on yours 🙂
If I had my way the whole world would be dusted with cinnamon – I think it is food of the gods 🙂
I have it every morning on top of my breakfast 🙂
These donut muffins sound perfect for breakfast! 🙂
These look and sound wonderful. I do love the jam centre and smothering them in melted butter then rolling them in cinnamon sugar just sounds so very yummy. I would love these for breakfast this morning xx
Everything is better after it has been drenched in hot butter. mmmm, butter…
These are just the cutest. I don’t blame the hungry dad for scoffing the lot!
I need to make another batch & hide them from The Hungry Dad x
How delicious! Combining all my favourite things into one-yum!
Thanks Jem – these were sooooo good!
These look too good to resist, I’ve have a hard time leaving them alone. Laura@Baking in Pyjamas
