I love the reaction I get when I put out a platter of whoopie pies. As they aren’t that well known in Australia, people usually ask what they are (‘what do you call this, Darl?’). The usual reaction upon being told is one of mirth and general happiness, and everyone feels the need to repeat it (‘Whoopie pies!’)
I have made gingerbread versions https://thehungrymum.com/2014/04/29/gingerbread-whoopie-pies-from-scratch/ and chocolate ones filled with pink marshmallows and rolled in sprinkles (sprinkle whoopie pies ) but I felt it was time to bake a sophisticated whoopie pie that wouldn’t be out of place at a high tea.
Carrot cake is a fav of the Hungry Mum’s Mum so if you like the flavour but not the concept of these mini pies feel free to try my traditional carrot cake with cream cheese frosting recipe: Carrot cake with cream cheese frosting
I adapted this recipe from cookingchanneltv.com
I have a whoopie pie tin but it isn’t necessary – simply drop the batter into equal sized mounds on a baking paper-lined sheet.
GATHER:
Pies:
1 3/4 cups plain flour
1 teaspoon baking powder
1 1/2 teaspoons cinnamon
1 teaspoon ground ginger
1/4 teaspoon baking soda
115 grams unsalted butter at room temperature, diced
1/3 cup brown sugar
1/3 cup caster sugar
2 eggs
2 carrots finely grated
1 zucchini finely grated
1 teaspoon vanilla extract
2 tablespoons milk
Filling:
340 grams cream cheese, at room temperature
1/3 cup sour cream
1/3 cup caster sugar
Grated zest of one lemon
LET’S GET TO IT:
Preheat oven to 170C.
If using a whoopie pie tin spray with non-stick cooking spray, other wise line two baking rays with non-stick baking paper.
In a large bowl use a fork to stir together the flour, baking powder, cinnamon, ginger and baking powder. Set aside.
In bowl of electric mixer beat together the sugars and butter until creamy and fluffy for about four minutes.
Scrape down sides of bowl with rubber spatula then beat in eggs one at a time.
Scrape down sides again then turn down speed to low and beat carrots, vanilla, zucchini.
Beat in half the flour mixture, the milk, then the rest of the flour mixture and mix until just combined.
Fill the pie moulds until just below the top, or drop two tablespoons of batter on the baking trays, allowing room to spread. Using wet fingers make the batter mounds equal and neat.
Bake for around 12 minutes or until golden.
Transfer to wire rack to cool.
Meanwhile make the filling: place all ingredients in bowl of electric mixer and beat for one or two minutes until all combined.
When pies are cold sandwich together with cheescake frosting.
I love carrot cake – we had it as our wedding cake – so I may well have to try these.
PS My kids snicker at the term whoopie pies every time too.
what a cool wedding cake! Yumm 🙂 Yep, the name just brings a smile to everyone’s faces.
Put the platter in front of us and we will eat first and ask later, LOL. They look good and chunky!

eat first, ask later – love it!
OMG how sinfully good!
I love adding zucs to cakes! Carrot cake is my Mom’s favourite. I’m sure she’d appreciate these! 🙂
I love the addition of zucchini in here! My kids would never know. Definitely making soon with my zucchini and carrot bounty from my garden
Exactly! It is amazing what the kids will happily eat if they don’t know what is hidden away!
What a perfectly yummy treat! I’m all about adding veg to desserts and calling it healthy!
The fresh stuff cancels out the sugar and fat 😉
I love the idea of carrot cake whoopie pies! Whoopie pies aren’t a big thing here in the UK either so cheesecake/carrot cake whoopie pies sounds even more clever and unique!
Now that looks good! Yum! Cannot wait to try it.
Whoopie pies have been a obsession with mine ever since I was a kid and I’d buy a few at the Amish Market. We are pulling our carrots soon so I’m printing this recipe out!
wooow! These look amazing. Love the idea to use cheesecake as a filling. I definitely have to step up my baking game 😀
Thanks! I probably need to up my everything else game – most cooking in my house is ignored in favour of baking 🙂
Looks pretty darn good! 😛
Cheers Fae – they are pretty cool 😉
Oh my! Looks and sounds delicious. I love it! By the way, this is the first time I’ve stumbled onto your blog. I’ll visit again… loving it!
Oh, thank you so much! Happy to hear that you enjoyed my blog 🙂 Yours is fab, too.
Hello 🙂
Those whoopie pies look so delicious!
By the way, I just nominated you for the Liebster Award! You can find out more about it on my new blog post!
~Julie
Thanks Julie 😉 These pies are a snap to make, too. Cheers for the nomination!
Yum! I need to give the old whoopie pie another go, and I love the idea of filling it with cheesecake 😀
It is such a cute little treat. And the filling works just as well when eaten by the spoonful 🙂
Now that is what I call a brilliant idea! LOVE IT!!!
he he he! Thanks 🙂
These look insanely good (and huge!). I could actually eat a whole one, none of this sharing malarky.
They aren’t exactly dainty and teeny, are they?! Be a devil and eat the whole thing, I say 🙂
Excited to see we’ll meet uo at EatDrinkBlog! Sandraxx
yay! Will be fun to meet bloggers IRL 🙂
I adore carrot cake, love saying ‘whoopie pies’ and don’t get me started on cream cheese frosting!!!! I am on a bit of a baking roll this week (must be all the cold weather)…these will be great to take to the Rugby on saturday…xxx
My life is a baking roll! I need to lift my non-baking game! By rugby you don’t mean the Bledisloe, perchance?
Whoopie pies are so much fun! I had no idea that there is a special whoopie pie tin, but I’m totally getting one! Carrot cake with cheesecake filling sounds sooooooo amazing! I love that you included zucchini in there!
Aren’t they the best?! I love my tin! Hope you make these 🙂
I love your creative tasty ideas, always! 🙂 These look huge & very appetizing too!, pretty too! 🙂
Followed a link and here I am! I don’t know much about baking, but I do know a whole lot about eating dessert. Everything looked so delicious, but after much debate I decided to put my comment here because carrot cake is one of my all-time favorites. I can just imagine how it tastes too! Yum yum!
I may have to go now, I think. I can feel my eyes putting on weight.
Your comment made me smile! Thanks so much for ending up in my sugar-and-fat-laden corner of the internet 🙂 You can’t beat home-mad carrot cake.
