The Hungry Mum - carrot cake whoopee pies with cheesecake filling

I love the reaction I get when I put out a platter of whoopie pies. As they aren’t that well known in Australia, people usually ask what they are (‘what do you call this, Darl?’). The usual reaction upon being told is one of mirth and general happiness, and everyone feels the need to repeat it (‘Whoopie pies!’)

I have made gingerbread versions and chocolate ones filled with pink marshmallows and rolled in sprinkles (sprinkle whoopie pies ) but I felt it was time to bake a sophisticated whoopie pie that wouldn’t be out of place at a high tea.

I have a whoopie pie tin but it isn’t necessary – simply drop the batter into equal sized mounds on a baking paper-lined sheet.

1 3/4 cups plain flour

1 teaspoon baking powder

1 1/2 teaspoons cinnamon

1 teaspoon ground ginger

1/4 teaspoon baking soda

115 grams unsalted butter at room temperature, diced

1/3 cup brown sugar

1/3 cup caster sugar

2 eggs

2 carrots finely grated

1 zucchini finely grated

1 teaspoon vanilla extract

2 tablespoons milk


340 grams cream cheese, at room temperature

1/3 cup sour cream

1/3 cup caster sugar

Grated zest of one lemon

Preheat oven to 170C.

If using a whoopie pie tin spray with non-stick cooking spray, other wise line two baking rays with non-stick baking paper.

In a large bowl use a fork to stir together the flour, baking powder, cinnamon, ginger and baking powder. Set aside.

In bowl of electric mixer beat together the sugars and butter until creamy and fluffy for about four minutes.

Scrape down sides of bowl with rubber spatula then beat in eggs one at a time.

Scrape down sides again then turn down speed to low and beat carrots, vanilla, zucchini.

Beat in half the flour mixture, the milk, then the rest of the flour mixture and mix until just combined.

Fill the pie moulds until just below the top, or drop two tablespoons of batter on the baking trays, allowing room to spread. Using wet fingers make the batter mounds equal and neat.

Bake for around 12 minutes or until golden.

Transfer to wire rack to cool.

Meanwhile make the filling: place all ingredients in bowl of electric mixer and beat for one or two minutes until all combined.

When pies are cold sandwich together with cheescake frosting.

    I love carrot cake – we had it as our wedding cake – so I may well have to try these.

    PS My kids snicker at the term whoopie pies every time too.

    I love the idea of carrot cake whoopie pies! Whoopie pies aren’t a big thing here in the UK either so cheesecake/carrot cake whoopie pies sounds even more clever and unique!

    Followed a link and here I am! I don’t know much about baking, but I do know a whole lot about eating dessert. Everything looked so delicious, but after much debate I decided to put my comment here because carrot cake is one of my all-time favorites. I can just imagine how it tastes too! Yum yum!

    I may have to go now, I think. I can feel my eyes putting on weight.
