Baked chocolate donuts with chocolate glaze

I am utterly enamoured with my mini donut baking pan. The holes are teeny tiny, resulting in a fairy-sized morsel that it irresistible. Whenever the baking urge strikes I often start with the pan and work backwards, searching for a worthy recipe. I have now found my ‘go to’ recipe for mini chocolate donuts, thanks to the lovely blog mysanfranciscokitchen.com

Miss6 helped me make these and they took no time at all. As they were made in the midst of a baking frenzy I gave half away to neighbours and kept the rest – the gals deemed them to be delectable. Can’t wait til the donuts are finished so I can make them again.

I used my go to chocolate glaze recipe, rather than the icing recipe specified, and decorated with shredded coconut.

GATHER:

¾ cup all-purpose flour

1 tsp baking powder

¼ cup cocoa powder

⅓ cup caster sugar

¼ tsp salt

2 tbsp plain yogurt

¼ cup milk

1 egg

3 tbsp vegetable oil

¼ tsp vanilla extract

LET’S GET TO IT:

Preheat oven to 180C and spray a mini donut pan with non-stick spray.

Put all the ingredients into bowl of electric mixer and gently beat until just combined [do not over-beat].

Fill zip lock bag with mixture, snip off the very corner, and pipe into pan [only fill to three quarters full].

Bake for around seven minutes.

As soon as they are done cool on racks.

Here’s the glaze I used: https://thehungrymum.com/2012/02/13/a-sorta-valentine-day-sweet-aka-mini-chocolate-marsala-cakes-with-choc-ganache/

Wait until donuts are cold before dipping into the room temperature glaze. Decorate with shredded coconut, or leave as is if you’re a choc purist.
