Vegan popcorn fudge: The Sweet Swap 2014

I recently took part in the second annual The Sweet Swap, run by the lovely Belly Rumbles and Chewtown. This is an Australia-wide even where bloggers create a batch of something, are matched with three other food bloggers, and send their parcels of yumminess to those three bloggers. In return you receive three lots of sweet teats form three different food bloggers.

Imagine all the behind the scenes work done by Sara (Belly Rumbles) and Amanda (Chewtown) in putting it all together!

As one of my recipients is a vegan, I started hunting for inspiration that was free of honey, gelatine, butter and other dairy.

I found it at the beautifully designed http://ohpapillon.com blog with the recipe Salted Popcorn Peanut Butter Fudge [ see the original here: http://ohpapillon.com/post/58806922974/more-i-know-its-been-kind-of-a-long-time ] – I tweaked it a smidgeon.

It won me over with its liberal use of popcorn, which I consider to be food of the gods. Regular readers would know I named my dog after this moreish snack food.

GATHER:

60ml coconut oil

60ml maple syrup

60ml crunchy peanut butter

2 tablespoons coconut milk

1 teaspoon vanilla extract

70g sifted icing sugar

70g plain flour

1 cup cooked popcorn

LET’S GET TO IT:

Line a 20x18cm pan with foil.

Place coconut oil, maple syrup, peanut butter and coconut milk in a saucepan over a low heat and stir until the oil has melted.

Increase the heat slightly and simmer for two minutes.

Take off the heat, carefully stir in vanilla, sugar, and then the flour. Mix until combined then stir in the cup of popcorn.

Scrape into tin [it will be thick and hard to manoeuvre] then put in fridge for a couple of hours to set. When firm slice into small squares.

    Aww, those boxes are so darn cute! I’m totally bummed because I was out of the country when the sweet swap happened and couldn’t participate this year. Nonetheless, these treats look incredible and hurray for popcorn too, also one of my all time favourite foods 🙂

    This is such an awesome idea! I love using popcorn as an ingredient and flavoring, so I’m all over your incredibly creative fudge. Sounds like it could be holiday gift box material, too.
