Rum baked donuts / doughnuts with booze

Yes – a donut with alcohol. How genuis is that? It combines lots of the good stuff that makes life worth living. Plus it is baked, so you don’t have to worry about scary boiling oil. Or is that just me? I will not boil oil under any circumstances. #scaredyCat

I have a mini donut pan but am on the look-out for a normal size one. These are teeny tiny so it means you can eat more – score!

Don’t worry if you’re not a big drinker as the rum taste won’t knock you out [or over] – it just adds a zing that makes your heart sing. Or something.

I found this recipe from diethood.com http://diethood.com/mojito-doughnuts/ and tweaked it

GATHER:

1 cup plain flour

1/3 cup sugar

1 1/2 teaspoons baking powder

1/2 cup milk

3 tablespoons rum

1 egg

3 tablespoons butter, softened

IMG_7368

LET’S GET TO IT:

Preheat oven to 180C and in a large, heat-proof bowl whisk flour, sugar and baking powder together.

Place milk, butter, egg and rum in a medium saucepan over a medium heat, stirring all the while, until the butter melts.

Remove from heat and pour into the flour mixture and gently stir until combined.

Grease a doughnut pan with cooking spray. Fill a large ziplock bag with the mixture, snip off one corner and pipe into pan.

Depending on size of pan bake for between 9 & 13 minutes / until a skewer comes out clean.

Gently remove from pan and cool on rack. Eat warm [sooo good] or allow to cool completely before dusting with icing sugar.

hehehe 🙂 I’d send you some but they are looooong gone!

you put rum in your doughnuts!!!!! This makes me so happy and I think we should be best friends. Baking and cooking with booze is one of my favorite things (though I’d never turn down a cocktail, haha) to do. (You’ve seen my marshmallows, yes?) Better yet, my daughter has a mini donut maker so I can make these. Totally share your fear of frying. And the baked ones are more healthy, yes?

Thanks for a fun recipe and love the photos.

I may or may not have googled ‘baking with booze’ on more than one occasion 🙂 I love it! Some people freak out but I’ve yet to see anyone drunk from a baked rum donut! And frying anything totally freaks me out – leave that to the professionals I say 🙂

This is a first for me – rum in donuts! I am not a big fan of fried foods and try to bake things if I can – sounds like a recipe I need to try 🙂

    • thehungrymum August 21, 2014 at 12:43 am #

Yep, you probably won’t find rum donuts at your local bakery! Give them a go & let me know what you think x

  4. coripk August 20, 2014 at 3:55 pm #

These sound glorious! Right up my street, especially because I’m scared of deep frying too.

    • thehungrymum August 21, 2014 at 12:45 am #

So glad I’m not the only one with fear of frying 🙂 These are very moreish.

  5. spiceinthecity August 20, 2014 at 5:33 pm #

  6. Traditionally Modern Food August 20, 2014 at 9:24 pm #

Love donuts like the idea of baking instead of deep fry:-)

    • thehungrymum August 21, 2014 at 12:42 am #

Give me baked donuts over fried any day! Not scared of calories but I reckon you taste the flavours more when it is baked.

  7. Hortense August 21, 2014 at 12:41 am #

Doughnuts are great! Rum is great! Together….. excellent. I think I should drink rum whilst eating these doughnuts….. or maybe a nip of Ron Swanson’s?

    • thehungrymum August 21, 2014 at 12:44 am #

Maybe you should make some of these and dip them into a glass of rum while watching Parks & Rec? Sounds like heaven 🙂

  8. daphne August 21, 2014 at 1:33 am #

I’m tempted , and I don’t usually eat donuts or gluten! Love that it is baked and so easy!

    • thehungrymum August 21, 2014 at 1:43 am #

oooh, am I turning you to the dark side?! These are so worth it!

  9. girl in a food frenzy August 21, 2014 at 6:35 am #

This reminds me of a tastier version, of a Rum Baba. Also has a hole, but not half as easy to eat as these, (I suspect!)

    • thehungrymum August 21, 2014 at 12:05 pm #

And easier to make! Never made a rum baba but I bet I’d love them 🙂

  10. tanaramccauley August 21, 2014 at 9:08 am #

Making these this weekend. They sound too good!

    • thehungrymum August 21, 2014 at 11:15 am #

yay! hope you love them as much as I do 🙂

      • tanaramccauley August 26, 2014 at 1:02 am #

What kind of rum do you use? Clear or brown? And is it flavored like coconut or spiced?

      • thehungrymum August 27, 2014 at 5:18 am #

I used dark, spiced rum but if you have clear rum in your pantry & you make these let me know how taste.

  11. vegeTARAian August 21, 2014 at 12:12 pm #

Donuts AND booze? Oh heck, I’m in.

    • thehungrymum August 22, 2014 at 12:42 am #

yeah, it is a combo you *need* in your life x

  12. Kristen August 21, 2014 at 4:34 pm #

I keep telling myself not to buy a donut pan because that means I’ll make (and eat) donuts way more often than anyone should. Yours look delicious though!

I do the same thing with earrings actually. I love how earrings look so I purposely never got my ears pierced so I can’t buy earrings (otherwise I’d buy way too many).

    • thehungrymum August 22, 2014 at 12:45 am #

I held off for a while but caved. Ditto with the whoopie pie pan. My baking stuff is taking over the kitchen 😉

  13. nelsons love donut too August 21, 2014 at 6:44 pm #

    Mmmm. Yummy!! Thanks.

  16. Midge August 22, 2014 at 6:58 am #

Eep! We are all doughnut-mad at home and I always keep a bottle of dark rum handy because I bake babas au rhum rather frequently. I daresay this brings two pleasures together!

    • thehungrymum August 22, 2014 at 2:32 pm #

hey, you don’t need to justify having a bottle of rum handy to me 🙂 I hope you make these, they are loooovely.

  18. hotlyspiced August 23, 2014 at 11:05 pm #

I love the look of your donuts, especially the last image where they’re dusted in icing sugar. I’ve never had a donut with alcohol in it before! These would be wonderful to try xx

These sound like the perfect Father’s Day treat. Think I can give my husband a donut pan for his gift?

    • thehungrymum September 4, 2014 at 10:41 am #

I reckon you should absolutely give hubby the pan as a gift – it is the gift that keeps on giving 🙂

  28. marymtf September 21, 2014 at 9:06 pm #

What can I say, but 🙂

  29. mary July 6, 2015 at 6:13 pm #

Hi, I made these today for my little sons. Only I doubled the recipe and used one cup all purpose and one cup mixed oats and whole wheat flour. For the rum, I made a solution of black strap molasses and water. Also used soy milk instead of the milk. It came out so lovely and soft…kids couldnt get enough .thank you so much for your unselfish service.
    Mary
