Yes – a donut with alcohol. How genuis is that? It combines lots of the good stuff that makes life worth living. Plus it is baked, so you don’t have to worry about scary boiling oil. Or is that just me? I will not boil oil under any circumstances. #scaredyCat
I have a mini donut pan but am on the look-out for a normal size one. These are teeny tiny so it means you can eat more – score!
Don’t worry if you’re not a big drinker as the rum taste won’t knock you out [or over] – it just adds a zing that makes your heart sing. Or something.
I found this recipe from diethood.com http://diethood.com/mojito-doughnuts/ and tweaked it
GATHER:
1 cup plain flour
1/3 cup sugar
1 1/2 teaspoons baking powder
1/2 cup milk
3 tablespoons rum
1 egg
3 tablespoons butter, softened
LET’S GET TO IT:
Preheat oven to 180C and in a large, heat-proof bowl whisk flour, sugar and baking powder together.
Place milk, butter, egg and rum in a medium saucepan over a medium heat, stirring all the while, until the butter melts.
Remove from heat and pour into the flour mixture and gently stir until combined.
Grease a doughnut pan with cooking spray. Fill a large ziplock bag with the mixture, snip off one corner and pipe into pan.
Depending on size of pan bake for between 9 & 13 minutes / until a skewer comes out clean.
Gently remove from pan and cool on rack. Eat warm [sooo good] or allow to cool completely before dusting with icing sugar.

you put rum in your doughnuts!!!!! This makes me so happy and I think we should be best friends. Baking and cooking with booze is one of my favorite things (though I’d never turn down a cocktail, haha) to do. (You’ve seen my marshmallows, yes?) Better yet, my daughter has a mini donut maker so I can make these. Totally share your fear of frying. And the baked ones are more healthy, yes?

I may or may not have googled ‘baking with booze’ on more than one occasion 🙂 I love it! Some people freak out but I’ve yet to see anyone drunk from a baked rum donut! And frying anything totally freaks me out – leave that to the professionals I say 🙂
This is a first for me – rum in donuts! I am not a big fan of fried foods and try to bake things if I can – sounds like a recipe I need to try 🙂

This reminds me of a tastier version, of a Rum Baba. Also has a hole, but not half as easy to eat as these, (I suspect!)

What kind of rum do you use? Clear or brown? And is it flavored like coconut or spiced?
I used dark, spiced rum but if you have clear rum in your pantry & you make these let me know how taste.

I keep telling myself not to buy a donut pan because that means I’ll make (and eat) donuts way more often than anyone should. Yours look delicious though!
I do the same thing with earrings actually. I love how earrings look so I purposely never got my ears pierced so I can’t buy earrings (otherwise I’d buy way too many).
I held off for a while but caved. Ditto with the whoopie pie pan. My baking stuff is taking over the kitchen 😉

Eep! We are all doughnut-mad at home and I always keep a bottle of dark rum handy because I bake babas au rhum rather frequently. I daresay this brings two pleasures together!

Hi, I made these today for my little sons. Only I doubled the recipe and used one cup all purpose and one cup mixed oats and whole wheat flour. For the rum, I made a solution of black strap molasses and water. Also used soy milk instead of the milk. It came out so lovely and soft…kids couldnt get enough .thank you so much for your unselfish service.
