Easy chocolate peppermint cake recipe

chocolate peppermint cake - the hungry mum

This is the story of a cake that almost wasn’t eaten. I made this simple chocolate peppermint cake from scratch to take to my friends at the newspaper where I work as a journalist. Then, the next morning, the usual pandemonium to get out the front door ensued and cake got left behind. Poor cake.

So I asked the Hungry Dad to take the cake to his office the next day. But he forgot.

Oh, the lot of this cake.

So, I decided to take it to work – except I was sick.

Rather than letting good cake go to waste I dropped it at my friend slash colleague Merryn’s house so she could take it to the office.

The purpose of this was twofold: I am a cake pusher and have turned everyone in my office into cake junkies. Secondly, I ask for donations for MSF (Doctors Without Borders) in exchange for my baked goods and have managed to raise a whole heap of money for an amazing not-for-profit group. They do life-changing work in some of the world’s most dangerous and inhospitable places and I believe they are all heroes.

So in the end cake was eaten, money was raised, and another cake story comes to an end.

Chocolate peppermint cake

GATHER:

125g melted butter

2 eggs

1/2 cup milk

1/4 cocoa powder

1 cup self-raising flour

3/4 cup caster sugar

dash best vanilla

generous handful chocolate peppermint choc bits

LET’S GET TO IT:

Preheat oven to 170C and grease a ring pan with non-stick cooking spray.

Place everything – except the choc bits – in bowl of electric mixer and beat until smooth and mixture has changed colour.

Stir the choc bits in with a silver spoon until just combined.

Pour into the tin and bake for 30-35 minutes or until a skewer poked into the centre comes out with just a few crumbs attached.

Leave in tin 5 minutes then remove to wire rack to cool.

Dust with sifted icing sugar to serve.

I’m crazy about the flavor of peppermint. Mixed with chocolate, it has to be good.

Thanks Lulu – to be honest I actually dislike choc peppermint but I seem to be in the minority 🙂

That’s such a good idea to ask for donations! I’m going to do that as an avowed cake pusher!

What a saga! I’m so glad the cake was finally eaten and that it didn’t go to waste. ‘Doctors Without Boarders’ is a fantastic charity and it’s wonderful that you support it with your baking and cakes xx

I know! Weird thing is, I take a cake every day to work and I never forget it. All it took to throw me out was to cut some of my hydrangeas for a friend at work and poor cake got left behind!
