This is the story of a cake that almost wasn’t eaten. I made this simple chocolate peppermint cake from scratch to take to my friends at the newspaper where I work as a journalist. Then, the next morning, the usual pandemonium to get out the front door ensued and cake got left behind. Poor cake.
So I asked the Hungry Dad to take the cake to his office the next day. But he forgot.
Oh, the lot of this cake.
So, I decided to take it to work – except I was sick.
Rather than letting good cake go to waste I dropped it at my friend slash colleague Merryn’s house so she could take it to the office.
The purpose of this was twofold: I am a cake pusher and have turned everyone in my office into cake junkies. Secondly, I ask for donations for MSF (Doctors Without Borders) in exchange for my baked goods and have managed to raise a whole heap of money for an amazing not-for-profit group. They do life-changing work in some of the world’s most dangerous and inhospitable places and I believe they are all heroes.
So in the end cake was eaten, money was raised, and another cake story comes to an end.
GATHER:
125g melted butter
2 eggs
1/2 cup milk
1/4 cocoa powder
1 cup self-raising flour
3/4 cup caster sugar
dash best vanilla
generous handful chocolate peppermint choc bits
LET’S GET TO IT:
Preheat oven to 170C and grease a ring pan with non-stick cooking spray.
Place everything – except the choc bits – in bowl of electric mixer and beat until smooth and mixture has changed colour.
Stir the choc bits in with a silver spoon until just combined.
Pour into the tin and bake for 30-35 minutes or until a skewer poked into the centre comes out with just a few crumbs attached.
Leave in tin 5 minutes then remove to wire rack to cool.
Dust with sifted icing sugar to serve.

I know! Weird thing is, I take a cake every day to work and I never forget it. All it took to throw me out was to cut some of my hydrangeas for a friend at work and poor cake got left behind!
