Easy chocolate Christmas biscuits – perfect for school Christmas parties

At this time of year I find my fridge buried beneath Christmas parties invites and the calendar bursting the seams with catch-ups. Not for me, silly – for I am but a mum. It is Misses 10 and 12 for whom the invites appear and at this time of the year it is at a rate of at least one each per day.

Between the school picnics, celebration picnics, end-of-year catch ups (usually disguised at picnics) and the inevitable sugar-fests that are the class Christmas parties it is inevitable that festive-baking will be done.

In years previous I have created all kinds of over-the-top baked Christmas goods only to find that anything with red and green M&Ms are always the hit of the classroom.

So this year it is easy chocolate Christmas biscuits / bickies / cookies for all! The obligatory festive-coloured M&Ms are here, as is a salty hit, thanks to crushed pretzels. You could probably open your pantry right now and have all you need to make these simple chocolate Christmas biscuits and if not a trip to even the most basic corner shop should see you through.

GATHER:

2 eggs

3/4 cup brown sugar

1/2 cup vegetable oil

1 tsp vanilla bean paste

1 3/4 cups plain flour, sifted together with

1 tbsp baking powder

1/2 cup cocoa, sifted

½ cup broken pretzels

½ cup red and green M&Ms

LET’S GET TO IT:

Preheat oven to 180°C and line a baking tray with baking paper.

In a large bowl, beat the eggs, sugar, oil and vanilla until well combined then stir in flour, baking powder and cocoa until combined.

Stir in pretzels and M&Ms and mix until just combined.

With wet hands roll tablespoonfuls of dough into balls and play om tray, leaving space in between for spreading. Press gently with a fork to slightly flatten.

Bake for 12-15 minutes, remove from oven and allow to cool on tray for for 5 minutes before transfer to a cooling rack.

    I would never have thought to add pretzels and M&Ms together. And, I know a few bods around my way (particularly at Christmas) who would just love this combo.
