Regular readers will know that The Hungry Dad recently raided his mum’s lemon tree for my baking pleasure. Our lemon bowl is still plentiful but another recent visit to mum-in-law’s house resulted in yet more lemons coming home with us.
I can’t believe we haven’t made lemonade, as per Beyonce’s behest, considering Miss8 and 10 have long talked about wanting to make lemonade.

And more – and my ‘to bake’ list is still incredibly long. I love baking with, and eating, lemon-scented cakes, bars and cookies.
In Australia we call cookies, biscuits or to use the vernacular – bickies. Lemon bickies make a lovely change from chocolate or vanilla and I have noticed that most people absolutely adore citrus baked goods and love the zestiness they provide.
This is an easy recipe for butter lemon cookies that I cut using a heart-shaped cookie cutter. I used an icing pen to decorate mine but they are lovely with no adornment. The aroma as these beauties bake is heavenly.
You will need a food processor for this recipe.
GATHER:
325g plain flour
200g cold butter, diced
125g caster sugar
Zest of two large lemons
2 egg yolks
LET’S GET TO IT:
Preheat oven to 170C and line two baking sheets with baking paper.
In a food processor whizz together flour and butter until it resembles breadcrumbs, then add the sugar, lemon zest and egg yolk and process to a dough.
Roll the dough between baking paper until 5mm thick and cut out biscuits with a heart-shaped cutter.
Cook for 12ish minutes – depending on the size of the cutter – and cool on wire rack.

These do seem easy enough to bake. Not much for me to foul up but I’m sure I’ll find a way. Still, I’m one of those who love citrus-y baked goods, so, it’s at least worth a try. 🙂
