Hands up if you don’t love chocolate mousse? [Peers around to see no hands raised]. Just as I thought. I personally love it but am often put off by the thought of making it as it always appears so faffy.
After searching high and low for a recipe that I could get on board with I came across this easy chocolate mascarpone mousse by dessert guru Rachel Allen when I was looking for something to serve in mini glass jars.Of course, you could easily make it in one large bowl and serve it that way – I just love dainty little desserts.
This simple yet rich dessert has only five ingredients, uses just two eggs – which don’t require being whipped in two different processes, thus making heaps of mess – and is a doodle to make.
As there is alcohol and raw eggs you should advise your guests before serving – uncooked eggs can be dangerous for pregnant women, and the alcohol is not cooked off her, like it is in many of my recipes.
Plus, if you don’t have to share, you can eat the lot yourself. Happy days.
Gather:
100 g dark chocolate, broken into pieces
75 g caster sugar
2 tablespoons brandy
2 eggs
250 g mascarpone
Let’s get to it:
Place the chocolate in a heatproof bowl over a pan of simmering water until melted and glossy. Remove from the heat.
Stir in sugar, brandy and eggs and, using a hand-held electric beater, whisk for five minutes.
Whisk in the mascarpone for a few seconds, just until combined.
Divide between glass jars and place in fridge for a few hours before serving.
Serve with extra whipped cream, if you like.

An oldie but a delicious and classic oldie! I had a chocolate mousse cake at lunch time, it was good, but I prefer digging into a glass old school. 🙂
