I have been told by mothers with teenage sons how much food they eat but as the mum of two girls under the age of 11 I am constantly amazed how much food they eat. My gals could eat for Australia and if there was a special category for cupcake eating they would both bring home the gold.

They aren’t alone: when they have friends over it is a constant eat-fest and I spend my time doling out hommous, crackers, popcorn, cupcakes…

I made these caramel chocolate cupcakes with chocolate frosting for Miss 10 to share with her team-mates at her soccer match tomorrow. Forget oranges at half time: a group of 10 year old girls and a batch of home-made cupcakes goes together like… chocolate and caramel.

These are super easy and require no mixer, just a bowl, a spoon and some relaxing baking time.

And I even used the team colours as the cupcake wrappers, so here’s hoping for a good game tomorrow.


60 grams butter, melted
1 cup buttermilk
2 eggs, lightly beaten
1/4 cup canola oil
1 tablespoon vanilla extract
1/2 cup light brown sugar, packed
2 cups self raising flour

1/3 cup grams chocolate chips
1 teaspoon cinnamon

Preheat oven to 180C and line a muffin pan with paper liners.

Melt butter, set aside to cool for five minutes.

In a large bowl whisk together the buttermilk, oil, egg, vanilla, and cooled butter.

Stir in the brown sugar, flour, cinnamon and choc chips until just combined. Don’t worry about the lumps – they will sort themselves out during baking.

Tip batter the muffin pan until two thirds full and bake for 20 minutes.

Remove to bench to cool completely, then top with chocolate ganache.

Ganache: In a small pot over a low heat melt together half a cup of cream and 125 grams of dark chocolate, stirring the entire time. Remove from heat when it is about half melted, residual heat will do the rest. You want to it be lump-free, glossy and melted together.

Stand for about half an hour, until it is thickened. Spread onto cakes.

    Your comment about one of your girls eating for Australia made me chuckle! If only they had an Olympics for eating. I could bring home the gold for eating cupcakes for the U.S. ! 🙂 Your cupcakes look fantastic. I love that they have chocolate and cinnamon, and that ganache! Mmmm! You are such a sweet mom to make the soccer team cupcakes instead of orange slices. They must all be so happy when it is your turn to bring snacks!

      Thanks Shari 🙂 In reverse order, I bake every week for miss8’s team so now it is just expected that I will bring baked goods – though they are always well received! My olympic eating category is cheese. I could be on the podium clutching my medal in one hand and my brie in the other!
