Chocolate peppermint muffins

School holidays have just ended here in Sydney and my Tupperware containers are all full of baked goods. The apple doesn’t fall far from the tree and Misses 8 and 10 love to bake. If we had more than an hour at home during the holidays they were asking to bake.

Having said that, I baked these muffins, and I don’t even like chocolate peppermint! I had some peppermint choc chips in the pantry, sent by my lovely Canadian cousin-in-law, and I felt like baking with them.

So this easy, no mixer required, chocolate peppermint muffin recipe was the result. And returning to my apple/tree comment, Miss 10 also dislikes chocolate peppermint, meaning miss8 has the responsibility of eating them all.

And I know – these muffins are basically a cupcake, from a nutrition viewpoint. I wouldn’t suggest serving these for breakfast, they are 100 per cent a treat.

Thankfully these muffins freeze well. Which is just as well seeing as the gals still have mountains of blondies/ slices/cake/ biscuits to get through…

GATHER:

130 grams brown sugar

100 grams self raising flour

50 grams cocoa

3 eggs

125 mL canola oil

3 tablespoons milk

3 teaspoons peppermint extract

100 grams peppermint choc chips

LET’S GET TO IT:

Preheat oven to 180C and line 12 holes of a cupcake tray with wrappers.

Whisk dry ingredients together in a large bowl.

In a jug beat use a fork to whisk together eggs, oil and milk then beat into the dry mixture.

Stir in extract and chips until just combined.

Scrape into wrappers and bake for around 18 minutes or until a skewer comes out dry.

Cool on wire racks.

    You will be forever haunted by mint and chocolate, despite your underwhelming feelings towards them. Sounds like some mega baking was accomplished by you all! Nice work!

      To be honest, I’m not a muffin fan… nor a choc mint fan… Put out the cheese platter tho and GETOUTTAMYWAY

      My cousin-in-law from Canada sent them to me! I don’t know if they are readily available in Australia.
