Nutella banana doughnuts – baked donuts

Nutella banana baked doughnuts. The Hungry Mum

School holidays + doughnuts = happy. Like most kids mine are staaaaarving when we have friends over to play, like today. Breakfast followed by a snack followed by morning tea then a snack then lunch then a snack – you get the picture.

It is so lovely to just breathe during the holidays. Today is day one and as they both have a friend over they are managing to keep themselves occupied. Which means I get to relax. Which means baking. Dr Phil. Reading the paper. Coffee. Not all at once.

I baked Nutella banana doughnuts to fill grumbling tummies and they were gratefully demolished by the crew.

This isn’t the healthiest snack but between my two and their two BFFs they annihilated the best part of a watermelon earlier so it all evens out.

As I type Miss 10 and her BFF are making pizza for lunch while Miss8 and her BFF are outside making parachutes from plastic bags. Don’t ask. Then a swim – even though it is just 24C – and making a movie based on a script they created.

Meanwhile I am about to have another coffee and read a magazine. Did I mention that I love school holidays?

Baked Nutella banana doughnuts. The Hungry Mum

GATHER:

150 grams unsalted butter, diced, at room temperature

50 grams brown sugar

50 grams caster sugar

½ tsp vanilla extract

3 eggs

175 grams self-raising flour

2 medium bananas, mashed in a small bowl until smooth

2 tablespoons Nutella

 LET’S GET TO IT:

Spray a doughnut pan with nonstick pan.

In bowl of electric mixer beat both sugars with butter and vanilla until pale and fluffy.

With beaters on low beat in egg and flour in alternative amounts until well combined.

Turn beaters off and a spoon to stir through the Nutella and mashed banana.

Scrape mix into a piping bag, snip the tip off and pipe into doughnut pan until two-thirds full.

Bake for around 15 minutes or until lightly golden and starting to pull away from the edges.

Remove from pan and cool completely on a wire rack.

When cold top with extra Nutella if desired.

    I just made baked doughnuts Sunday night too! Aren’t they amazing and easy. Yours look so good. I have a weak spot for banana and Nutella, and together….wow! I can see these being smashing! Thank you so very much for sharing!
