Easy Australia Day dessert Inside out lamington cupcakes - the hungry mum

This is such a speedy, easy and fun recipe that you have no excuse for not making it this Australia Day!

Many Australians mark Australia Day with a barbecue at a friend’s house, a picnic, or a day at the beach. These easy inside out lamington cupcakes would be a hit at any Oz Day celebration. Staying home for a quiet one? A batch of these cupcakes would be the perfect companion! 

Parts of ths recipe are do ahead, making it a simple dessert to prepre. Bake the cupcakes, allow them to cool completely then freeze for up to two weeks in a Tupperware. Defrost the morning you want to eat them.

The ganache too can be made a week in advance.

The only thing I suggest doing on the day is whipping the cream and assembling them.

However you mark the day – be it celebrating, lazing by the pool, protesting the day as white invasion day – let this inside out lamington cupcake be your companion.

GATHER:

Strawberry jam

Thickened cream, whipped to soft peaks

Shredded coconut

cupcakes

125g diced butter at room temperature

good splash vanilla

½ cup caster sugar

2 eggs

1  ½ cups self raising flour

½ cup milk

LET’S GET TO IT:

Preheat oven to 170C and line 2x 12 hole patty pans with liners.

Place everything in the bowl of electric mixer and blend until all combined and smooth.

Place in party pans and bake until golden 17-ish minutes.

GATHER:

Chocolate ganache:

155 grams dark chocolate

½ cup cream

LET’S GET TO IT:

In a small saucepan over low heat melt 125g dark chocolate [broken into chunks] with 1/2 cup cream. Stir until melted, thick and glossy. Allow to stand 15 minutes until thick. Use knife to spread over cakes.

ASSEMBLE:

When cupcakes are cold cut in half horizontally. Spread one side with jam, then top with a dollop of cream. Sandwich together, spread the top with ganache and sprinkle with coconut.

      Thank you! We had our BBQ on the weekend so I did all my Australia Day baking then. I found the flags buried in the back of my cupboard, I must have bought them last year!!

    Not a huge lamington fan, but that is because of the messy factor when making them. These bad boys are great, much more simple and they look tops too. Happy Straya Day! Hope you have an awesome day. xo

      I heart lamingtons from bakeries but agree that they are too damn messy. I’ve blogged a few variations – including easy lamington slice and ice pops – which are super yum but no faff 🙂

    Fantastic, although I’d never trust myself to make them for a quiet celebration at home. They’d be gone by day’s end. Better to bring them to a barbecue and share the wealth. That doesn’t mean, however, I wouldn’t leave a few at home for a late night snack. 🙂

      I cannot tell a lie: I served these babies to friends for a pre-Oz Day BBQ at our place but I did squirrel a few away for later [for the family, of course…]
