One bowl eggnog cupcakes for Christmas

Can you believe I only tried eggnog this week? As it is high summer in Australia at Christmas we are likely to quaff chilled champagne than a warm custard-like drink, but I have to say I quite liked it.

I bought some eggnog as I had a sudden flash of inspiration to create eggnog cupcakes. I was a bit apprehensive about how they would turn out but my colleagues at the newspaper where I work as a journalist fell upon them. I tried one and was thrilled with the results.

This easy eggnog cupcake recipe is a snap to make and uses just one bowl. The prep takes less than ten minutes, the baking less than 20, the eating – just seconds.

Decorating these eggnog cupcakes with whipped cream is another time-saver that takes mere seconds – leaving you longer to spend getting ready for the party/ basting the turkey/ having a sneaky nanna nap (or is that just me?)

eggnog cupcakes - The Hungry Mum

GATHER:

125g diced butter at room temperature

½ teaspoon freshly grated nutmeg splash vanilla

½ cup caster sugar

2 eggs

1 ½ cups self raising flour

½ cup eggnog

2 tablespoons spiced rum

Whipped cream

Freshly grated nutmeg – for decoration

Eggnog-cupcakes

LET’S GET TO IT:

Preheat oven to 170C and line 2x 12 hole cupcake holes pans with liners.

Place everything in the bowl of electric mixer and blend until all combined and smooth.

Place in cupcake wrappers and bake until golden 17-ish minutes.

When cold top with whipped cream and freshly grated nutmeg.

      You have to! It tastes like Christmas in a cup 🙂 I love those cupcake wrappers but they are nearly all gone now.

    Ah, that must be so yummy. I don’t drink too much eggnog either, but my sister once made a type of warm spicy drink with it on christmas last year, and that was amazing! I love how these look!

    I’d love to try these cupcakes but eggnog has an extremely short shelf life here. Yes, I could buy twice as much but, honestly, we both know how that would end. 🙂

    I love eggnog cupcakes. I was once given some with a custard filling of eggnog and I just had to recreate it. I think it’s because I adore nutmeg!
