Orange liqueur cake with white chocolate ganache

I wish I could be paid to spend all day trawling Pinterest for delicious things to bake. I mean, I’m good at it. I enjoy it. I can and do spend hours falling down baking-related rabbit holes. But I just don’t think anyone is going to whip out the chequebook any time soon.

Sigh.

I found a recipe on the wonderful world of Pinterest that I used as a jumping off point for this cake. I swapped things, added things, reduced things and came up with this cake. Here is the original: http://www.poiresauchocolat.net/2010/07/espresso-white-chocolate-and-rose-cake.html

In lieu of espresso I used orange liqueur – triple sec, to be precise. This was my first foray into baking with triple sec and I was mightily impressed. I can see this cake making a regular appearance in my kitchen.

To be honest I had a big of an issue making the white chocolate ganache but I always find working with white chocolate to be fraught with issues.

I decorated mine with rose petals from my beloved rose bush – the original post on the poires au chocolat blog used sugared petals.

GATHER:
110g butter
60g soft brown sugar
50g caster sugar
2 eggs
110g self-raising flour
2 ½ tablespoons orange liqueur – I used triple sec

1/2 tsp vanilla extract

LET’S GET TO IT:

Preheat the oven to 160C and grease and line a 20 cm round tin with non-stick baking paper.

In bowl of electric beater cream butter and sugars together until lighter in colour, then turn off mixer and scrape down sides of bowl with a spatula.

Add eggs, one a time, then scrape down bowl again.

Fold through flour then add in vanilla and liqueur and mix until well-combined.

Scrape into tin the bake for 20-ish minutes – you may need a bit longer, depending on your oven.

Remove from oven and sit in tin for ten minutes before turning onto wire rack.

When cold ice:

Melt together 100grams white chocolate with 60 grams cream in whichever way suits you best – micro or double boiler method.

Keep an eye on it, don’t let it burn. I had to stir the heck out of mine.

When it is lump-free ice the cake then decorate with fresh petals – they need to be chemical-free so use some from your garden. Otherwise serve as is.

    Simple cakes are the best. I love the orange liqueur. This reminds me very much of an Italian polenta cake spiked with gran marnier. 🙂
