Donna Hay sprinkle whoopie pies – perfect for children’s parties

Play dates require planning and commitment and nerves of steel. Yes, it should just be fun and easy but in my experience it is having a famished flock of children descend upon the kitchen every 15 minutes with wails of ‘we’re huuuunnngry’.

The playing takes second place to the feeding and a child who has just finished lunch will be able to put away enough food to put a sumo wrestler to shame.

With this in mind I made chocolate whoopie pies in anticipation of a double play recently. Yes, a food to keep even four little girls satiated for more than 5 minutes needed to be portable. To be sugar-filled. And most importantly, to be pretty – dousing a cake in colourful sprinkles will have that effect.

Suffice to say this treat won the day. They would be so perfect at a kid’s party, which is why Donna Hay included the recipe in a recent kid’s annual. I reduced the sugar in the cakes/pies as the marshmallow filling is soooo sweet.

I used a whoopie pie pan as I make these treats fairly often but if you don’t have one a baking-paper covered flat sheet is fine.

GATHER:

250g butter, softened

½ cup brown sugar

1/2 cup caster (sugar

3 eggs

2½ cups plain flour, sifted

½ cup cocoa, sifted

1 teaspoon baking powder

sprinkles, to decorate

pink marshmallow icing

150g pink marshmallows

30g butter

60g white chocolate, chopped

LET’S GET TO IT:

Preheat oven to 150°C and grease your whoppie pie pan or prepare your baking sheet.

In bowl of electric mixer beat butter and both caster sugars until pale and creamy.

Add the eggs, one at a time, and beat until combined.

With mixer on low speed tip in flour, cocoa and baking powder and mix until combined.

Roll tablespoonfuls of the mixture into balls and place on baking tray, then gently flatten, or fill the cavities in the whoopee pie pan.

Bake for 15–20 minutes or until light golden then remove and allow to cool completely on wire rack.

Meanwhile, in a small pan over a low heat stir marshmallows and butter continuously until smooth.

Remove from heat, add the chocolate and stir until melted and smooth. Allow to cool completely.

Spread half the pies with the icing and sandwich with remaining biscuits. Roll the sides of the whoopie pies in the sprinkles to serve.

      That dress-up box has paid for itself many times over! And my mum bought miss7 a mermaid costume just yesterday, which will call for more playdates I’m sure 🙂
