Donna Hay easy chocolate and caramel tart for dessert

This is the ultimate after diner treat for those who live by the credo that there’s no such thing as too sweet.

I love Donna Hay, I love her recipes and I especially love her dessert and baked recipes. They are doable and punch way above their weight in terms of effort versus result.

At my Easter brunch this year, when I catered for several thousand rather than my actual guest list of family, I made this tart as the token chocolate dish. I always expect people to be ‘chocolated out’ at Easter events and I am always proved wrong. In my experience chocolate anything is always the first to vanish from a dessert smorgasbord.

This is a super easy, do ahead number that doesn’t even require you to make pastry. Winner! Naturally home-made pastry will look and taste better than the shop-bought stuff but I didn’t hear a single complaint…

Cut this tart into elegantly thin slivers as it is rich. And sweet. And you will want all your friends and family to try it.

Gather:

380g can sweetened condensed milk

200g dark chocolate, chopped

1 sheet store-bought shortcrust pastry, thawed

2 tablespoons golden syrup

60g butter

2 tablespoons pouring cream

 Let’s get to it:

Preheat oven to 200°C and spray a 20cm fluted loose-bottomed round tart tin with non-stick spray.

Place pastry in tin, gently prick with fork, line with non-stick baking paper, fill with baking weights and blind bake for 13 minutes. Remove the baking paper and weights and bake for another 10 minutes or until light golden. Set aside to cool.  (You can do up to here a day or so in advance – keep the shell in an airtight container in a cool, dark place.

Put condensed milk, golden syrup and butter in a saucepan and cook over a low heat, stirring continuously, for a few minutes or until thickened slightly. Don’t take your eyes off it as you don’t want a gooey, sticky mess burnt on the saucepan.

Pour into the pastry case and refrigerate until set – I allowed a few hours.

Place the chocolate and cream in a saucepan over low heat and cook, stirring, until melted and glossy. Spread the chocolate mixture over the caramel and refrigerate until set – I left mine over night.

    This looks beautiful. The recipe is right up my alley, I don’t bother with sweets unless I get to fall into a sugar-induced coma afterwards 😉 I’m totally trying this recipe.

    Wow…several thousand? How many of these did you make? Chocolate is always so popular everywhere- whenever I bring food to a party or something, I always make sure to make it chocolate because then it’s almost certain to be a hit! 😀 This chocolate caramel tart looks amazing!
