Gingerbread whoopie pies from scratch

You guys, I bought a whoopie pie pan! I swore I wouldn’t coz my baking paraphernalia has taken over the kitchen. When we visited San Fran last year we went to my mecca – the three-storey Williams-Sonoma kitchenware store. I went twice in two days and lugged soooo much stuff back to Sydney [via Hawaii – my poor suitcases] but decided against buying the whoopie pie pan.

Then, last week, I hit the Sydney Williams-Sonoma store. It was nowhere near the size of the San Fran store but it did have the pan that I had previously spurned. And it was on sale. Would have churlish to not buy it…

I’ve used it twice already so I’m guessing it was a good purchase.

In case you’re curious, a whoppie pie is a hand-held mini cake/soft pie hybrid baked good. The two halves are melded together with a creamy filling, such as cream cheese icing or ganache.

I had intend to bake bickies today but the idea of gingerbread whoopie pies popped into my mind and a quick google later I had my recipe. As it was the last day of school holidays I had a small helper in the shape of Miss6. She’s a ginger fan from waaay back and did a very thorough job of licking the bowl clean at the end 🙂

I cheated by using dolloping cream to stick my pie halves together as I didn’t have cream cheese and I was too lazy to head to the shops.

GATHER:

280g plain flour

½ cup caster sugar

1 egg, beaten

2 ½ teaspoons ground ginger

1 teaspoon ground cinnamon

1/3 cup boiling water

1/3 cup vegetable oil

½ cup golden syrup

1¼ teaspoons baking soda

LET’S GET TO IT:

Preheat oven to 180C and grease a whoopee pie tin. If you don’t have a tin [can’t say I blame you] grease and line a baking tray. You’ll need an ice-cream scoop to perfectly measure out your batter so they’ll be even.

Put all dry ingredients in a large bowl and whisk until combined.

Stir in egg and oil, then add boiling water and mix until combined. Don’t overbeat.

Place mix into whoopie holes (do not over-fill) or using ice cream scoop to place batter neatly on lined pan. Flatten.

Bake for around 12 minutes or until lightly golden.

Place on wire rack to cool completely and then spread half the pies with your favourite cream cheese or ganache, or do as I did and use very thick cream.

    Hungry mum you are making me hungry! These remind me of NZ ginger kisses…yummo. Need to get myself to that Williams Sonoma store in the big smoke soon, I have only ever been to one years ago when visiting the US. 🙂

      OMGosh, that store in San Fran was amazing! In hindsight I should have allowed a whole day to explore it 🙂

      They are soft & delish & moist & YUM! Make these [don’t worry about getting a pan – just use an ice-cream scoop] and thank me later 😉

    yum! I have a whoopie pie cookbook, though not the pans. Gingerbread is a great flavor for these. Sounds like you have excellent taste in toys 🙂

    Recipe looks great.
    My American friend makes Whoopee pies often and never tried to make them myself,should give them a try.

    These look amazing! I love that you all know what whoopee pies are! You have no idea how many people i’ve told that I love these and they looked at me like I had multiple heads because they had never heard of them before. Too funny!

      I’m a bit of a baked goods nerd 🙂 Most people also stare blankly at me when I discuss whoopie pies so I must continue to educate the cake eating masses 🙂

    I have thought about getting a whoopie pie pan, but haven’t yet. Your pies look so good! It is nice you had such a good helper in the kitchen. I must admit I am jealous of your shopping trip to Williams and Sonoma in San Francisco. It sounds like a wonderful place. Thanks for sharing your recipe!

      Thanks! Sometimes my helpers are more of a hinderance 😉 That trip to San Fran was so excellent – I keep hounding the Hungry Dad to return! These pies are so yum & you don’t need the pan – just try using the ice-cream scoop.

      I was in kitchenware heaven in the SF store 🙂 They bake in store so as you walk you you’re greeted by the smell of yummy things [in our case it was pumpkin bickies – misses 6&8 were thrilled to be offered a warm biscuit]. #WantToGoBackToSanFran

    I’ve learned two things from your blog today: one, is that there is such a thing as a whoopee pie pan and number two, there is a website called ‘Mighty Ape’ that sells them for $13. Looks like I’ll have to fill my kitchen up with one more ‘toy!’ BTW, we’ll have to now be careful when we say something like, “Let’s make some whoopee tonight!”

    My intentions to bake are limited, but when I spontaneously try something out int he kitchen (especially with a little helper) it’s like magic. I should make more time for baking, I will try these for sure. Happy Nesting
