Super easy two egg white macaroon recipe

So, this is a very basic recipe and the only reason I’m even posting it is that I often have a surplus of two egg whites when I’m baking or making the Hungry Dad’s favouritest ever sweet, custard. I was stashing the whites in the freezer but decided to actually bake with them recently.

This recipe is sooo simple that my kids [even Miss6] could make this without any supervision. The choc bottom takes them from meh to marvellous.

 Gather:

3/4 cup caster sugar
2 egg whites
2 cups desiccated coconut

150g dark chocolate, melted

Let’s get to it:
Preheat oven to 180C and place non-stick baking paper on a baking tray.

Mix everything except chocolate in bowl using a silver spoon.

Place golf ball size mounds on the trays, leaving space to spread.

Bake for between 10-13 minutes, until pale gold.

Cool completely before using a butter knife to swipe the melted chocolate across their bottoms.

Allow chocolate to set before eating.

Beautiful! The chocolate is such a delicious addition, taking them from cookie, almost to candy like.. Yum

I’ve tried pre-packaged versions of these but of course homemade ones would be much tastier! I love the idea of adding chocolate on the bottom. I would make that layer extra thick!

I think I’m correct in saying that chocolate makes everything taste better! Thanks for stopping by.

I’m always looking for ways to raise my recipes from ‘MEH’ to ‘MARVELOUS’ – looks like I don’t have to look any further!

GET OUT! How easy does this look? You have totally made my night. I am currently at the very end of a three day juice fast (again) and looking at pictures of food on the net and dreaming of my first few meals……better still I (nearly) have all those things in the cupboard. You rock my world !

    • thehungrymum March 14, 2014 at 11:48 pm #

soooo easy! I can’t imagine fasting for 3 days – I had to fast for abt 10 hours before having one of my babies and I was almost murderous towards the end. I hope your fast is now over and you can ALL the yums.

I didn’t think I could do it either….I eat all the time (and often too much). But you feel soooo amazing during and after that it honestly is worth the battle of wills.
