Salted chocolate chip and toffee biscuits / cookies

Hands up if you think Twitter is addictive? Now, wave your arms in the air like you just don’t care if you find Pinterest more addictive than chocolate? Just as I thought – that site is one helluva a rabbit hole. I always find inspiration and great baking ideas but I spend yonks of time going off on all sorts of fab tangents.

Pinterest lead me to this delish recipe for sea salted toffee chocolate chip cookies from the beautiful website farmgirlgourmet.com – here’s the original http://www.farmgirlgourmet.com/2013/04/toffee-chocolate-chip-cookies.html

This is yet another salty/sweet biscuit [or cookie] and everyone who tried one loved it. I think I prefer this   to the pretzel biscuit I recently blogged.

I was lucky enough to be sent some toffee chips from my lovely Canadian cousin-in-law Heather. In Australia perhaps you could substitute caramel bits, available in the baking aisle.

I did reduce the amount of sugar, choc chips and toffee chips from the original, and changed the use of flour to plain white flour rather than whole wheat.

GATHER:

¾ cup brown sugar

¼ cup white sugar

150g dark choc chips

2 eggs

3 cups plain flour

200g dark choc chips

125g toffee or caramel chips

225g butter, diced, at room temperature

Best quality sea salt

LET’S GET TO IT:

Preheat oven to 170C and line two baking sheets with baking paper.

In bowl of electric mixer beat both sugars and butter until pale, about two minutes.

Add eggs, one at a time, until well combined, then add flour.

Tip in choc and toffee bits and beat on lowest speed until just combined.

Using a tablespoon place a dollop of batter of prepared sheet and gently flatten using a fork dipped in flour.

Sprinkle over sea salt then bake for 12-ish minutes, until just cooked.

Place on wire rack to cool.

    Wow–lovely. I always appreciate toffee chips and it’s fun to see them in a traditional cookie dough. lol pinterest as a “rabbit hole”–I don’t go there for that reason. These blogs are a deep enough void (though an informational one 🙂 ) as it is.Thanks for sharing. Maybe I can “pinterest” (is it officially a verb yet?) through you 😉

    Oh yes, right with you on the PInterest addiction. The great irony with Pinterest is that one spends so much time being inspired that there is little time left to actually create (or bake)!
    These cookies look lovely, especially as they contain 3 of my favourite ingredients – choc, salt and caramel.
