Sweet and salty pretzel caramel chocolate chip cookies

So, the salty/sweet taste craze is a winner in my books. My first toe-in-the-water test was Nigella’s uber-good salted caramel sauce which I believe to be the answer to most of life’s ills.

These cookies were next. The crunch of the pretzel. The sweetness of the caramel. The softness of the cookie. The sighs of goodness…

Everyone who tried them raved about them and when Mis7 asked me which recipe I was blogging informed me that I ‘must’ make these again.

Oh, if you insist.

Gather:

2 cups plain flour

1 egg

1/2 cup crushed pretzels

170g butter, diced, at room temperature

½ cup brown sugar

¼ cup caster sugar

1 cup milk chocolate bits

1 cup caramel bits

splash vanilla

Let’s get to it:

Preheat oven to 180C and line two baking trays with non-stick baking paper.

Using paddle attachment in mixer cream butter and sugars until it changes to a lighter colour, then add egg and vanilla and mix until combined.

On low speed add flour then use spoon to stir in pretzels and choc and caramels bits.

Roll a ball the size of a walnut and place on tray, and then use a floured fork to flatten.

Bake 8-ish minutes until barely golden – do not over-bake.

Allow to cool on baking tray then remove to wire rack to totally cool.

    Very pretty cookies/biscuits! It looks like you placed each chocolate chip just so perfectly., I’ve loved salty/sweet combo since I was a little bitty girl. These cookies are being pinned so I can make them soon!
