Lemon honey biscuits / cookies

ImageAt the library recently, I place where I love to hang out, I found the quirkily titled ‘The Cookiepedia’ by Stacy Adimando. This bible to cookies inspired me no end and the first recipe I road-tested was what the author called lemon chewies with honey.

Baking with lemons  produces such a wonderful aroma, and I think the smell of baking is sometimes better than eating the end product  🙂

GATHER:

2 cups plain flour

1 teaspoon baking powder

115 grams butter, diced, at room temperature

½ cup caster sugar

1 egg

1/3 cup honey

zest from one large lemon

LET’S GET TO IT:

Sift together flour, baking powder, set aside.

Cream butter and sugar until light and creamy, add zest and mix until combined.

In a small bowl stir together egg and honey and combined then add to butter mixture and beat in.

Add flour in three lots, mixing as you go. Blend together until smooth.

On a lined biscuit sheet place heaped teaspoons of batter and gently flatten with fork.

Bake 10 minutes until golden, place on wire racks to cool.

    Gee…… So many biscuits and cakes and such….. What do you do with all the baked items….. Do your family wash themselves with rags on sticks? (due to the eating of many baked goods). And the washing up!! Phew!!!

      Well Super Horst, my husband is on a health kick [he even made avocado choc mousse – can you believe it?!] so we give baked goods away. Today for instance Miss7 took 2 containers of bickies she made to school, I’m taking a cake to a relative’s house this afternoon and tomorrow I’m taking choc slice to work.

    I’m intrigued by this cookiepedia you speak of. I must find it and drool over all the cookie recipes. I love lemon and honey together so I can just imagine how fantastic these cookies taste. Like little bites of springtime!

      Even the book’s design is clever: it has a spine that allows you to open the book flat on the bench so it doesn’t slam shut [I’m not describing it very well but I hope you know what I mean 🙂 ]

    I can see why you’ve categorized these cookies as fast and simple — but they could also be categorized as delicious I’m sure!
