Delicious caramel surprise vanilla cupcakes via the Eat Sweet blog

Blog hopping is my favourite waste of time lately and I especially love seeing what all those creative baking-types are up. I recently stumbled across the oh-so-pretty eat sweet blog and swooned when I saw her jersey caramel chocolate cupcakes. I knew I had to make them so it was off to the shops for a bag of these delicious, so very sweet lollies. I made my cakes vanilla, rather than the original chocolate, although I reckon choc and caramel is always a winning combination.

If you want to see the gorgeous original recipe here it is:

If you want a vanilla cupcake use my recipe and gather some jersey caramels, too: https://thehungrymum.wordpress.com/2012/06/10/just-a-quickie-warm-vanilla-cupcakes-with-chocolate-melted-marshmallows-6-2/

Follow the details for the cupcakes but only half fill the cupcake wrapper with batter. Insert a jersey caramel then cover with batter.

I decorated mine with a blob of double cream, then a jersey caramel cut in half. Why not go the whole hog and use a full jersey?

Cool – now I shall no longer consider it a waste of time, more like research 🙂

I’ve seen a lot of creative cup cakes in Perth and I can that this one is creative too. If I will try to bake this recipe I will use a colorful cupcake paper with different patterns rather than a plain one.
