A very chocolate cake: choc chip chocolate loaf

Choc chip chocolate  loaf cake with chocolate glaze

My love of choc chips in baked goods is well known so when I came across recipe for a chocolate cake with choc chips I was sold. I found the recipe on the allrecipes.co.uk site but the original didn’t specify how much milk so I had to guesstimate. I think I guessed correctly! This isn’t a fancy cake but I bet it will be gratefully received by your guests.

GATHER:

175g plain flour

50g cocoa

generous handful dark chocolate chips

2 teaspoons baking powder

75g butter, melted

2 eggs lightly beaten

150g caster sugar

¾ cup milk

Glaze:

150 grams milk chocolate

1/2 cup pouring cream

LET’S GET TO IT:

Preheat oven to 170C and line a loaf tin with baking powder.

Sift cocoa, flour and baking powder into bowl of electric mixer and mix on low.

Stir in eggs, melted butter and milk and mix until just combined.

Using a spoon add choc chips.

Spoon into loaf pan and bake for 45 minutes then leave in tin for ten minutes before removing cake to wire rack to cool completely.

GLAZE:

Place chocolate and cream in a small saucepan. Over low heat stir until melted and glossy. Set aside for half an nour or so then pur over cold cake.

    I baked this last night. Its not too sweet with its sugar but chocolatey taste with chococips and cocoa. Perfect for tea time and or with vanilla ice cream.
