When I saw the post for iced VoVo tarts by the wonderfully named Frocks & Frou Frou blog I knew I would be making it sooner rather than later. Iced VoVos are an iconic Australian biscuit made by Arnotts: a shortbready biscuit base topped with raspberry jam, marshmallow & dessicated coconut. So sweet. So yum. So want one now…
Lilli from Frocks & Frou Frou made everything from scratch. I didn’t [except the strawberry jam which I had the fridge] but I imagine the homemade pastry would have added to the taste.

These are tiny but super, doper sweet. I could manage just one but my sugar junkie Miss 4 loved them as did her little friends. So maybe try these for a kid’s party – they will love them.
GATHER:
1 sheet thawed shortcrust pastry
pink marshmallows, snipped in half
dessicated coconut
strawberry or raspberry jam
LET’S GET TO IT:
Spray a mini muffin tin with non stick spray. Preheat oven to 170C.
Using a 6cm cutter cut out rounds of pastry and gently place in mini muffin pan.
Add a blob of jam to each round, then top with half a marshmallow.
Place in oven [and here’s where it gets vague] until the marshmallow starts to melt. It is hard to give an indication of time as it depends on the quality of your marshmallow and the heat of your oven.
When starting to melt remove and sprinkle with coconut.
Allow to cool before eating. They keep well in the fridge for 4 or 5 days.
Iced vo-vo’s = big yum in my book!!! 🙂

I started the baking club, we’ve only had a couple of months but we are slowly growing and its a great excuse to cook something you might not otherwise. You should start one…this month we have to make biscuits or cookies so I might try and make your tart recipe back into an iced vovo biscuit. I’ll post it if I can..

Yes do, spread the baking revolution! ha! We’ve done meringue pie month, layer cakes and now cookies.. what better thing to do once a month on a sunday afternoon than have a cup of tea and try the results of lots of types of baking. Thank you! These bickies are a childhood treat for Aussie kids. Having said that I’m sure my adult tastebuds would find them underwhelming!
