I do love a choc chip. Often the introduction of choc chips to a recipe takes it from blah to wow, can I have more? As much as I love choc chip biscuits I find it tedious to be rolling/flattening/baking tray after tray. So when I stumbled across a recipe for Chocolate Chip Cookie Bars by the wonderful Two Peas and Their Pod I knew at once I’d be baking it. It all the boxes I was after. Choc chips. Vanilla. Crunchy. GATHER:
150g melted butter [at room temperature]
2 cups self-raising flour
1 egg
1 egg yolk
3/4 cup dark chocolate chips
1/2 cup brown sugar
1/2 cup caster sugar
Preheat oven to 170C and line a 20×30 pan with non-stick paper, leaving some overhang at one end.
Beat the sugars, vanilla and melted butter in bowl of electric mixer until well-combined.
Add egg and egg yolk, beat in.
With mixer on low stir in the flour until all combined.
With a spoon add choc chips.
Place batter in pan and bake for 20-ish minutes/until golden brown [you may need another 5 or so minutes, depending on your oven]. Allow to cool on wire rack before slicing into squares.
