It was my niece’s birthday and she had flown down from her home near the Queensland border to catch up with her fav cousins (misses 7 and 9) and her nana. Naturally a cake was in order but the biggest decision of the moment was the nature of the cake. As the niece is a self-confessed a sweet tooth (her mum made her a cake that used 2 kilos of icing sugar!) a chocolate cake was in order but that didn’t really help – have you SEEN how many recipes for chocolate cake lurk on the web?
The idea of rocky road crept into my mind…

Miss9 agreed that her cousin would love it so the two of us set about baking.
I dramatically reduced the amount of sugar – I used ¾ cup compared to the two cups in the original recipe and it was still too sweet. As this is so packed with extra chocolate, both in and on top of the tart, I would suggest reducing this again. Next time I’ll use ½ cup and see how that goes.
We hosted a small party and the birthday niece loved it. Happy days.
GATHER:
brownie
170g butter, diced
115g dark choc, chopped
1/2 cup of sugar
1 cup flour
3 eggs, whisked
2 teaspoons vanilla
¼ cup white chocolate cut into chucks
¼ cup diced walnuts
topping
100grams dark chocolate
splash unflavoured cooking oil such as canola
½ cup white chocolate chunks
½ cup marshmallows – I used both miniature and normal size
2 tablespoons diced nuts of choice
LET’S GET TO IT:
Preheat oven to 180C and grease a tart pan with removable base. Place pan on flat oven tray – a bit of brownie batter may leak so better on the tray than on your oven.
Place chocolate and butter in a large saucepan over low heat and stir until completely melted and glossy.
Remove from heat and allow to cool for five or so minutes.
Stir in sugar, vanilla, flour, eggs and beat with silver spoon until combined.
Add white chocolate and nuts and mix until just combined.
Scrape into pan until 2/3s full – you will have extra batter left over.
Bake 14-ish minutes – you want the brownie to be moist inside.
Set aside to cool completely, then make and decorate with topping:
Topping:
Place the chocolate and splash of cooking oil in a microwave safe bowl and cook for 30 seconds at a time on very low setting, stirring after each blast, until melted and glossy.
Stir in extra nuts and white choc then dollop onto tart. I kept mine in the centre but feel free to do your own thing.
Slice into skinny wedges to serve.
