Creating my own home-made Baileys makes me a happy woman. I go through phases of indulging in an after-dinner Baileys, which, for the uninitiated, is a creamy whiskey drink. I like it with a splash of milk, or just straight. And with my simple recipe you can enjoy it too.
Should you be a non-drinker, I hazard to guess there is a friend, family member, neighbour or colleague who would adore a bottle of home-made Baileys. This recipe makes around 800ml so make sure you have a large enough, sealable, sterilized glass jar to store it in when it is made. This home-made Baileys would make an excellent Christmas gift, and you could ivied one lot into two smaller glass bottles to give as a gift. It needs to be kept in the fridge and should last around four weeks… if you can bear to have this luscious, easy-to-drink, umm, drink, on hand.
One of the key ingredient in this recipe is chocolate syrup. I made my own and the bonus is, there was plenty leftover to drizzle over ice-cream, add to warm pies, blend into milkshakes or just eat from the jar. Anyway you look at it, that’s a win. You might prefer to buy your own.
Chocolate syrup recipe
GATHER:
½ cup caster sugar
½ cup cocoa powder, sifted
½ cup water
2 teaspoons vanilla bean paste
LET’S GET TO IT:
Whisk cocoa and sugar in a medium saucepan off the heat. Pour in water, put heat on low and whisk constantly until mixture boils. Boil for four minute, stirring all the while. Take off the heat, stir in the vanilla and seta aside to cool, where it will thicken. Do not add to Baileys recipe until room temperature. Store remainder in sterilised glass container in the fridge.
BAILEYS:
GATHER:
¼ cup espresso
1 cup thickened cream
1 1/2 cups whiskey
400 grams sweetened condensed milk
3 tablespoons chocolate syrup
LET’S GET TO IT:
Place all ingredients in an electric blender and whizz until it all comes together – this should take about 20 seconds.
Pour into the glass bottle and place in fridge. Gently shake before serving over ice, with milk or straight.
