The sad, neglected apples sitting unloved in the fruit bowl were never going to get eaten. They looked so shiny, so full of hope in the greengrocers. By the time they had completed the journey home and been relegated to the big purple ceramic fruit bowl they had begun to lose their lustre. A cake would turn these lovelies into something befitting their sweet taste.I peeled and diced three apples then stewed them with some butter, water, sugar and cinnamon until they were golden, sticky and rather delicious. Then I followed the recipe I found on bestrecipes.com.au for ‘easy apple cake’. The link is here if you’d like to view it: http://www.bestrecipes.com.au/recipe/easy-apple-cake-L2681.html
This cake is gorgeous for morning tea and if you wanted to take it up a notch you could serve it with some double cream.
Rustic, chunky and moist – what else could you ask for in a cake?
GATHER:
150g melted butter
2 cups of stewed apples [tinned is fine]
2 cups self-raising flour
¾ cup caster sugar
2 heaped teaspoons cinnamon
2 eggs
LET’S GET TO IT:
Preheat oven to 150C and line a springform tin with baking paper.
Mix everything in a bowl with a silver spoon until it is just combined.
Pour into tin, bake for 40-ish minutes.
Serve warm or cool.
easy + yummy = good combo! 🙂
That’s how I roll!
I’ll be baking this on the weekend. Thanks for passing along the recipe.
Hope it worked out nicely for you 🙂
The cake :worked” just fine. It was so easy to make and very flavorful. I’ll definitely make it again. Thanks again.
Fabbo! Good to hear. Thanks for the feedback.

Apple is a great foil to the richness of cake 🙂
“The sad, neglected apples sitting unloved in the fruit bowl”: it sounds like literature!
Sometimes baking is like literature 🙂
I love the whole one-bowl scene. It fits with my lazy nature. Less washing up.
I hear that, girlfriend. Maybe next time I could try mixing the cake in the baking tin? Even *less* washing up.
You are a genius. Fact.
Looks wonderful! Yum!
Thanks!
This looks beautiful! And I love one bowl recipes, even more of the time when recipes ask you to start with two I think pfffft and put it all in one 🙂
Snap! I am so lazy, I always cut corners [while baking from scratch] when I’m cooking.
Love the fact that its so easy, perfect for busy mothers!
Who has time for anything but easy?!
Oh, that looks so tasty and made with love!
Cheers!
I love one bowl recipes! Cleaning and washing up are never really the fun parts of cooking are they? 🙂

Oh how I’d like a slice right now. I just love anything made with apples…I think it is my downfall!
You should make it – anything with apples is practically a health food 🙂
Num num num! This looks very yummy. Love having an easy cake recipe ready to go!
This is easier to make than going to a store & buying a cake 🙂
Oh this looks fabulous 🙂 Apple cake is something I very rarely make but always makes my tummy rumble when I see a picture of it!
Cheers! It is *so* quick to make – you should try it next time you have some apples that have seen better days!
looks absolutely divine x
Thanks!
Love it
cheers!
I do the same thing with bananas. Haha! I have one question: How do you stew apples? And great post btw!
Cheers! To answer your question: dice apples into chunks, place in saucepan with some butter, cinnamon and smidge of water. Cook, stirring until soft but not mushy. I know that is very vague but that’s the way I make them!
Awesome, thanks!
I love apple cakes!! Hahahah I am guilty of having all these apples at home and instead of healthily crunching into them, usually stew them with honey and/or put them in cakes woops. hahahah
All the best intentions etc… I find I chuck more fruit than I eat. Case in point tonight with the watermelon that had gone funky in the fridge 😦
