Simple one bowl caramalised apple cake

The sad, neglected apples sitting unloved in the fruit bowl were never going to get eaten. They looked so shiny, so full of hope in the greengrocers. By the time they had completed the journey home and been relegated to the big purple ceramic fruit bowl they had begun to lose their lustre. A cake would turn these lovelies into something befitting their sweet taste.I peeled and diced three apples then stewed them with some butter, water, sugar and cinnamon until they were golden, sticky and rather delicious. This cake is gorgeous for morning tea and if you wanted to take it up a notch you could serve it with some double cream.

Rustic, chunky and moist – what else could you ask for in a cake?

GATHER:

150g melted butter

2 cups of stewed apples [tinned is fine]

2 cups self-raising flour

¾ cup caster sugar

2 heaped teaspoons cinnamon

2 eggs

LET’S GET TO IT:

Preheat oven to 150C and line a springform tin with baking paper.

Mix everything in a bowl with a silver spoon until it is just combined.

Pour into tin, bake for 40-ish minutes.

Serve warm or cool.

      Cheers! To answer your question: dice apples into chunks, place in saucepan with some butter, cinnamon and smidge of water. Cook, stirring until soft but not mushy. I know that is very vague but that’s the way I make them!

    I love apple cakes!! Hahahah I am guilty of having all these apples at home and instead of healthily crunching into them, usually stew them with honey and/or put them in cakes woops. hahahah

      All the best intentions etc… I find I chuck more fruit than I eat. Case in point tonight with the watermelon that had gone funky in the fridge 😦
